    Marinated Feta

    We love marinated fetta in Chez Onyx but it costs a bomb. I've been looking at the ingredients and it seems to be oil, peppercorns, bay leaves, rosemary and oregano.

    I'm thinking it can't be too hard to make my own.
    Has anyone made it? How long does it keep? How long does it need to marinate? What other flavours can I use?

    It's EASY! Don't forget the garlic cloves. I would say that if it's air tight it would last a while.

    How to make Persian feta
    You can easily make quality & tasty Persian feta at home, and not pay the exorbitant
    price you would pay in the deli. All you need to do is lightly warm some good quality
    olive oil on low heat with a bunch of oregano or thyme and a few garlic cloves till the
    garlic is soft and the herbs are wilted. To make it easier you can tie the herbs in a
    bunch with some string. Then let the oil cool slightly till just warm and then pour over
    roughly cubed goat’s cheese, otherwise known as chevre. Allow this to marinate at
    least a day, and you will have a really yummy Persian feta that will last for weeks in
    the fridge as long as the oil is covering the cheese.

    Great idea, I bought some yesterday to put on our home made pizza and it was $10 a pop. Maybe you could keep the container of one you may have to make some more. Just subbing coz I want some ideas to yummm

    I absolutely love both marinated feta and Persian feta. I buy the south cape brand. I have, once or twice, retained the oil from the marinated feta and reused it on plain cubed feta. Not sure if it is highly toxic but I am still here so I guess it's ok.
