    Noodle Pancakes - For Catastrophic

    This is a total embarrassment recipe.

    I made it up one day... and then found its an actual recipe. I used to call it cheats noodle cake... Sush coined the term Noodle Pancakes and it went from there...

    Make up a pack of 2 minute noodles (I don't use the sachet) So you could just buy the bulk noodles if you like...

    You can add a sprinkle of any seasoning you like, chick stock powder, soy, garlic, spring onion etc... Then you mix the drained cooked noodles in with the egg. Then pour into a small skillet that is hot and has a little oil in it. Let it cook the bottom over a medium heat. and then when it's almost set carefully slide onto a plate and then flip it over into the pan on the uncooked side using the plate. Then cook through and slide back onto a plate. Cut into wedges and serve. You can also do it in egg rings for little fritters. But I'm lazy and use the skillet. Sometimes if I get fancy I cut out shapes for the kids with cookie cutters. I freeze it and put it in their lunch boxes instead of sandwiches.

    Thanks LOL! I forgot I do about 3-4 eggs to one packet of noodles.

    we used to do it too but we called them noodle omlette lol i think we used 1 packet and one noodle

    I have that recipein a Pancake, Fritter & Omlette recipe book that I have! We made it once and it's not too bad - a little bit bogan like 'tater-tot casserole' is LOL, but OK for something different.

    I reckon it would be fine so long as you had an ice brick in there with it to keep it cold.

    this is a staple cant be bothered dinner in our house.
    Add some mixed veges some chopped up ham or leftover sausages etc and its a balanced meal I put some grated cheese on it and chuck it under the grill if im feeling a bit fancy too

    LOL, there is a little bit of bogan in all of us I think. I had to laugh the other day when I saw the new That's Life recipe magazine in the newsagents and on the front cover was 'tater-tot casserole' (potato gems for us Aussies) and I thought Michelle Duggar would be proud

    Dude don't knock a good tater casserole... I happen to make my own "cream of whatever soup" though.

    I'm totally doing this for my DD............too embaressing to send to daycare for lunch? Hmmmmm - I'll just add some zuchinni and carrot grated and do as suggested, put them in egg rings.

    Brilliant idea - I love it! I'm always looking for easy and fairly light meals to serve on the days that DP does tai chi, and can't have a heavy meal. I hope he likes it.

    Oh, yeah! Made it for our dinner last night, with cabbage, grated carrot, sliced red capsicum, chili and coriander, and it was awesome!! Thanks for the idea!
