Vegetables to suit spit

Now obviously you cant cook your veg in a spit but what type of veg would suit a spit pig?
Whether it be a salad that contains veg or as a warm side dish.
Preferably salad though as we have to transport it 30km

I'm not a salad person at all, but from what I've seen at family events, it's usually just a simple garden salad. Nothing fancy, just the old lettuce, tomato, and... whatever else you put in a salad

We used to wrap potatoes up in foil and throw them in the coals under the meat to cook. Sometimes my mum would fill them with cheese, onion and bacon too.

Personally I've always thought we should spit on red capsicum. And zucchini.

Mix 1/3 wholegrain mustard with 2/3 honey and toss sweet potato in then roast. Wrap some garlic cloves in foil and roast in oven at same time. Add some spanish onion to the sweet potato about 30 mins before finished. Dry roast some pinenuts. Place all on a bed of spinach leaves and then sprinkle with balsamic vinegar. Super yummy and looks pretty! x
