What can I make with leftover roast pork? It's shredded and currently in the freezer. I need a quick, easy, non-complicated recipe/idea for DHs dinner tomorrow night (I can't eat meat). Thanks!

Use it in rice paper rolls with some herbs etc..
Or grab a few fresh bread rolls and heat the pork up in some yummy gravy - nothing beats a pork and gravy roll!

We do something different - usually with diced roast pork. Fry it up in a pan with some chili flakes (to taste) then add a generous splash of brown vinegar over it and keep cooking until vinegar cooks off. Serve with mash etc. yum! Also works well if the leftover pork was frozen previously.

I used leftover frozen pork and pumpkin in a quiche once, tasted awesome and took bugger-all prep or cooking time, and almost no dishes!
Well, I got 2 meals out of it all. One was the pork gravy rolls, which DH really liked. The other was stir fried rice which I did with a packet paste, onions, carrots, celery, tomato and egg. He said it was as good as a restaurant fried rice![]()
