TBH, I think 6 is a bit young for a sleep over, and she might be disappointed that not many kids would go.
What sort of things is she into? How much do you want to spend?
DD is just 5 and loves Hello Kitty. She wanted a hello kitty party, but asked too late, and I had organised her a tea party. What about going bowling? My neice had a bowling party and the kids loved it. The bowling centre organised food and cake. Maybe a disco? Do you have a space you could black out and have some disco lights and dancing like a garage or the living room? A dress ups party, complete with run-way (if other parents are willing you could put some lip gloss on and do their nails?).
