    Fresh Fennel Recipes?

    Do you have a great recipe that has fresh fennel in it? I have heaps of fresh fennel in the garden ready to eat so I need some ideas. TIA

    I make a yummy fresh fennel salad. I cut up fennel and apple, toss together with walnuts, crumble in some goats cheese and squeeze over a lemon. Really fresh and light

    We do a very basic fennel salad using the bulb and the fronds (?) by just using salt, pepper, olive oil & vineger

    Soup

    Ingredients

    2 fennel bulbs, reserving few tbsp of its fronds for garnish
    1 onion,chopped
    1 tbsp butter
    1/4 cup heavy cream
    1-2 cups of vegetable stock (as per the consistency you desire)
    salt and pepper to taste

    Tips
    * Replace butter with 1 tsp of olive oil and heavy cream with low fat/fat free milk for low calorie version
    Method
    1
    Trim the fennel by removing the thin stalks and the thick base. Coarsely chop the bulbs. In a pan, heat the butter and stir in the onion and fennel together.

    Cover and cook for 5-8 minutes.

    The vegetables should be slightly crisp yet tender. Don't overcook them.

    Transfer it to a food blender and puree them along with little stock to help in grinding, until smooth.

    Pour it back in the saucepan along with the rest of the stock and cook for 1-2 minutes in low heat. Add the seasoning and the cream along with the reserved fronds.

    Cook for another 2 minutes and Serve hot.

    Awesome ideas ladies. I'm going to make the soup with some home made organic spelt bread. I will also roast some with beetroot and make some of the salad suggestions from this thread an Onyx's other thread. No doubt I will also cook some with fish

    What about using your fennel for a steam facial or to make some tea (its REALLY good for your digestive system!)

    I LOVE FENNEL!! Can you tell?

    Oh my goodness Sunny I just saw what is underneath your ticker!!!! Awwwww you are such a beautiful friend!!! I'm surprised you didn't suggest that I mix up some lentil and fennel pie LOL

    A facial sounds like a fab idea!

    FYI fennel also gets rid of hiccups! Fresh fennel that is and it is great for digestion and if you eat it while breastfeeding it can help with colic

    I was just going to say about the colic and gripe water use! Great minds!

    Now, lentil and fennel pie, I dare ya to make it AND eat it )

    There is a recipe we use where you cut the bulb in 4, boil it until just softening, then bake in the oven for 20 min. Before you bake it dot it with butter and generous amounts of Parmesan.

    LOVE fennel!!

    I agree with fennel soup. Yummy! I also team fennel up with fish. I make up a quick parcel with sliced fennel at the bottom a bit of oil/salt/pepper & fish on top. 'seal' the bag & put it in the oven. The fish comes out steamed basically. I have protein & one serve of veg ready. If I can't be bothered I put my other veg in it. Look mum, no pots!!

    Goodness me I just tasted our dinner and it is AMAZING! I threw everything into the slow cooker and it's yummmy, yum, yum

    Fresh Fennel
    Fresh Beetroot
    Orange, flesh, juice and rind
    Honey
    Chicken
    Salt

    Delicious!
