Does anyone know if I can successfully substitute ghee for butter? Ie use ghee instead of butter in baking?
I have some ghee that should be used by the end of May and I was thinking maybe I could use it in Anzacs or cupcakes in the next day or so but I'm not sure that the taste would work out right. I bought the ghee for a chicken curry which was yummy but don't want to make another huge batch or two of that as I don't have the freezer room to put the leftovers in.
I've not used ghee in baking but I use it to cook things all the time. Use it instead of oil when frying things - it's much better for you and has a higher smoking temperature.
I wouldn't imagine you can substitute it for butter in baking, as the milk solids have been cooked out, but you could give it a go and see what happens.
