This soup is too good not to share. Christy has posted it before but I think it needs its own thread.
It's quick and delicious and when I can't be bothered with tortillas I just leave them out or eat it with mountain bread instead.
Chicken Tortilla Soup....
6 cups chicken stock
1 large tin diced tomatoes
3 cloves of garlic
1 tsp ginger minced or shredded... however you do your fresh ginger
salt & pepper
cayanne pepper (if you are that way inclined....pinch to 1/2 tsp)
chicken thighs... cut in large pieces browned first
coriander (I use 1 tbsp fresh chopped with stems)
1 tsp oregano (dried)
2 tsp cumin
2 shallots/spring onions chopped
1-2 avocados
corn tortillas
Brown the chicken first, and then in the giant saucepan put a dash of oil and saute the ginger, garlic, and onions, then add chicken and the stock, tomatoes, salt & pepper, chilli, coriander, oregano, cumin and if you want too you can add corn, or more veges like carrots and celery.
To serve, put avocado in bowls and top with soup, fry some corn tortillas in a small amount of oil until they are crisp and cut up and put in top of the soup and put a sprig of fresh coriander on top....
awwww I know this soup is awesome, I do play with it from time to time and adjust according to supply and 'can't be bothered'....now I always add cilantro or coriander to every bowl.
