    Traffic light collection of capsicums

    Need ideas as I now have three capsicums in my fridge. Not in a cooking mood, so desperate for suggestions. Thanks.

    Soup. Roast for 20 minutes with a couple red onions, tomatoes, garlic cloves, drizzle of olive oil, oregano, salt and pepper. Then blend with a litre of vege or chicken stock and couple tablespoons of tomato paste.

    if you use for stir fries and things, you can chop, bag and freeze and just throw in the frozen bits when you need them. we do this with fresh capsicum all the time during summer when the plants are giving lots of them - freeze them chopped up ready for cooking, then drag out what we want when we want them. we use a lot of frozen capsicum and it still holds the taste - is great in things like fried rice, stir fries etc

    Chop up and put in freezer to add to pasta sauce/curry/stirfry etc at later date (if you can't use them before they go bad). We do this regularly with fresh capsicum of all colours. I have a container just for capsicum in my freezer.

    Grill, skin and chop. Then grate up other vegies, throw in an egg, flour and cheese and bake a vegie slice! mmmmmmm, easy too.
