    Christmas turkey

    So I've never done a turkey and I want to try it this year (will possibly do a trial one next weekend first just in case lol!).

    So a lovely juicy stuffed turkey is the aim. Hit me with your stuffing recipes please?! Also how do you prepare the turkey, do you put lemon under the skin?

    sangie, my go to for things like that is Martha Stewart. Check out her website around the Thanksgiving section. Lots of helpful tips and recipes (some of which I would have never thought of on my own!).

    Make sure that no matter what else you do, you loosen the skin and rub lots of fat (butter or duck fat) between the flesh and the skin. I usually put a bit of finely cut sage as well as lemon juice, salt and pepper mixed into the fat too. It stops that horrible dryness that turkeys can get. I also wrap strips of prosciuto over the breasts and wings too to help keep moisture in.

    You need to baste him often - say every 30 minutes or so.

    I'll try to find the stuffing recipe I've used in the past - its sage and walnut - cos apparently I'll be needing it now too ;-)

    Lulu thanks hun, I'd love a stuffing recipe that's been tried and tested. Thanks for the prosciutto tip, would never have thought of that.
