Looking for a tried and tested egg free cake recipe.
I'm looking after a little boy on DD's birthday with an egg allergy and I'd like to make something we can all enjoy
I usually just use egg replacer or use vinegar, baking powder and water. I think the measurements are 1 teaspoon baking powder, 1 tablespoon water, 1 tablespoon vinegar = 1 egg. I usually try to find a recipe that doesn't need too many eggs.
I do have this one...
Egg and Dairy Free Chocolate Cake:
3 cups Self Raising Flour
2/3 cups cocoa
2 cups caster sugar (i've used white sugar and it works for that too)
1 tsp salt
2 cups water
2/3 cups canola oil (i always use vegetable oil)
2 tablespoons lemon juice
1 tsp vanilla essence
Method:
Preheat oven to 180 degrees.
Sift flour, cocoa, sugar and salt into a large bowl.
Add remaining ingreds and combine well.
Pour mixture into a greased cake tin (or muffin tins).
Bake until cooked through.
This makes a very moist, dense cake. Super yummy and super easy! I've also made a vanilla alternative by omitting the cocoa and adding a tsp extra of vanilla.
You can buy No Egg substitute in the Gluten Free/Health Food aisle of Coles if that helps.

EGG SUBSTITUTE: 1 tablespoon of vinegar along with 1 teaspoon of baking soda can be substituted for 1 egg. Both white distilled vinegar and apple cider vinegar can be used. This combination works best in cakes, cupcakes. 2 tablespoons of lemon juice can be used in place of the 1 tablespoon vinegar.
