I have previously used it up to 3-4 days after buying. I buy one and section and refrigerate straight away on a monday and DH uses it for lunches for the rest of the week. I haven't eaten "leftovers" while pregnant but will again after.
I wonder about this too. I'm sure it would be fine 3-4 days afterwards (maybe longer) but somehow unless it's eaten the next day, the appeal has worn off and I know that's ridiculous. I think it would be different if I chopped it up and put it in a tupperware container.
What I tend to do if I don't like the idea of eating it on a sandwich is make something from it - chicken/leek quiche that requires cooked chicken OR make a chicken stock.
