    Freezing and defrosting cupcakes

    I need to make and decorate 30+ cupcakes (for the morning) and an actual cake (for the afternoon) but I'm limited in time before the event.

    So rather than staying up until goodness knows on the night before, am I able to at least make the cupcakes (leave the decorating) and then freeze them? Decorating them at a later time? They would be just a GF chocolate or vanilla cupcake. How far in advance do I need to thaw them in order to be able to decorate? Overnight? How do I thaw them? In the fridge? On the counter?

    Cupcakes thaw pretty quickly so they'd probably only need half an hour or so on the bench.

    I did 300 for a cupcake decorating stall at my kids school. Froze them all. They defrost pretty quickly.
