    Salad ideas, pretty please!!

    So, I have heaps of lettuce growing, 3 different types (no idea what they are, lol). So I said I'd make a salad for a party on the weekend. Need some ideas. I also have some basil growing out there and I'm really into baby spinach at the moment. What else?? And what dressing??


    Also, you're not supposed to eat pre-packaged salads when pregnant but that's how you buy the spinach, that's the only way I've seen it. Is it ok to have that?? Obviously I'm going to wash it.

    you could just make a really nice green salad, with tomato, cucumber, carrot, fetta, well what ever you like really...

    my fave dressing to make is

    1 tbls of mango chuney ( sp? )
    2 tbls of olive oil
    2 tbls of lime juice


    now I dont really do measurements I just go on taste and add a bit more of which ever I think I need to add...

    you can also use this dressing with a chicken salad I make ( but its more for a hot summers night dinner than a BBQ bring over iykwim )

    you need
    chicken
    garlic
    mango chuney
    oranges
    avocardo
    mango
    lettus

    put chicken in a snap lock bag about 2 pieces and add garlic and mango chuney and set aside for a few hours...

    cook chicken on BBQ
    cut orange mango and avocardo into segments, place onto a plate with lettus, once chicken is cooked slice into small slices and add to salad poor over dressing...

    We eat heaps of salads here...

    Our favourite is a balsamic lamb salad with grilled haloumi.

    BUT a basic salad at our house:

    Cos & spinach
    1/4 red onion sliced thinly
    1/4 red capsicum sliced thinly
    one or two handfuls of olives
    1 tomato sliced thinly or grape/cherry tomatoes sliced in half
    ** either sundried tomatoes or artichoke hearts sliced thinly **
    1/4 loaf of turkish bread
    olive oil
    balsamic vinegar
    touch of salt
    pepper

    I slice and cut the turkish bread into cubes and spray olive oil on them & pop it in the oven for 10 minutes and then toss and another 10 minutes until crispy.

    Pour 2 tablespoons balsamic vinegar and 1 tablespoon olive oil into a jar or small container with a lid. Add salt & pepper and herbs... I love fresh basil torn into the salad so often don't add herbs if that is there. Coriander is really nice in the salads as well. Shake up the dressing.

    Combine all the other salad ingredients in a bowl and toss well, add the cooled bread and dress at the table before serving.

    For a meal you could coat marinate 2 chicken breasts (butterflied is easiest!)in lemon juice, honey and garlic for 20 minutes. Grill or pop in a fry pan with a spray of olive oil and cook well. Slice thinly and add to the above salad!



    Combine the ingredients of the salad and toss well.
