The basic rule is: 1 part acid (vinegar, lemon juice, balsamic vinegar) to 1 part oil, than you add extras.
So in our house if I'm having salad with steak or something & want a good dressing I do 1-2 tbsp lemon juice, 1-2 tbsp olive oil, 1 tsp mustard (dijon) and 1 tsp honey for a quick honey mustard type flavour.
OR
1-2 tbsp balsamic vinegar
1-2 tbsp olive oil
1 tsp or fresh ripped apart oregano
salt & pepper
