I dont have a recipe but you could do a usual meatball/meatloaf type mix, smash them into muffin tin and bake them.
Then for the icing do some mashed potato, you could put a bit of food colouring or beetroot juice, what ever takes your fancy to make it pink.
ETA - I always grate in some carrot and zucchini into my meat balls, you could do the same
I do (roughly as I don't use recipe)
mince 500g
an egg
dry breadcrumbs about half-1 cup
chopped parsley
garlic
a carrot and zucchini grated
salt/pepper
Okay... I do a savoury muffin thingo...?? You could put that in cup cake containers?
1 cup wholemeal self raising flour (you could use white self raising if you want)
1/4 cup sweet potato puree
1 small zucchini grated finely
1 carrot grated finely
1 egg
150 gm lunch meat sliced finely - so ham/chicken/turkey/beef whatever...
pinch of salt
1/2 cup rice milk (or cows if you are that way inclined)
Mix it all up together & pop in muffin tins and bake until brown on top. You could top it with cheese and melt it on top.
My mum used to make those for us when we were kids (what Christy suggested). They are yummy! She would make them with whatever meat was left over from the night before.
It's a South African meat loaf flavoured with curry powder and mango chutney - I've served it to kids a few times and they usually love the combination of the fruit with the meat. It is topped with a thin layer of a savoury egg custard, so it even looks like it has been covered with icing - the quantities below are about right for a standard sized bread loaf tin.
Bobotie
No self respecting South African housewife does not own (and treasure!) a favourite bobotie recipe.
* 2 tablespoons vegetable oil
* 2 onions, peeled and sliced
* 2 1/4 pounds good quality lean ground beef
* 1 thickish slice of white bread
* 1 cup milk
* 1 tablespoon medium curry powder (or hot for the hale and brave)
* 1 1/2 tablespoons sugar
* 2 teaspoons salt
* freshly grated pepper (about a half teaspoon)
* 3/4 teaspoon turmeric
* 1 1/2 tablespoons malt vinegar
* 1/2 cup seedless raisins
* 2 tablespoons strong chutney
* 2 bay leaves (or fresh lemon leaves if available)
* 2 medium eggs
METHOD
Preheat oven to 350?F.
Heat oil in medium saut? pan. Stir in onions. Cook over medium heat until transparent. Add ground beef. Cook until lightly browned and crumbly.
Soak bread in half the milk, squeeze out excess milk and mash with a fork - DON'T TOSS SQUEEZED OUT MILK! Pour it straight back into remaining milk. Set milk aside, and ad pulled-apart bread to the meat mixture.
Add curry, sugar, salt, pepper, turmeric, vinegar, raisins, chutney to the beef mixture. Spoon the mixture into a greased baking dish, and place bay leaves on top.
Bake for 50-60 minutes in preheated 350?F oven.
Beat egg with remaining milk and pour over mixture approximately 25 - 30 minutes before end of baking time.
Serve with steamed rice (traditionally yellow!) and extra chutney.
Pure South African comfort food! Especially nice warm in winter, or cold with a salad in summer.
