    Ambrosia

    This is supposed to be a salad, served alongside a main course, like at a BBQ.

    I have only ever had it as a dessert, and TBH could not imagine it alongside a savory meal.

    Ambrosia
    1 cup mandarin oranges (drained)
    1 cup marshmellos, chopped in half
    1 cup sour cream
    1 cup pineapple chuncks (drained) OR halved/quartered strawberries
    1 cup shredded coconut


    Combine all ingredients and toss gently. Allow to rest in refrigerator for about half an hour This recipe can be increased to serve the amount needed. Just increase all ingredients by cups and the same amount of each.

    I am going to try halving the sour cream and substituting with thick Jalna yoghurt.

    I love Ambrosia, and we've often eaten is as part of BBQ salads in our family. It's so sweet though - a little bit goes a long way.

    Your recipe is the same as mine Rayray - only I'd never thought of substituting strawberries, which sounds like a nice idea. I usually throw a few frozen raspberries on top for decoration

    It just sounds wrong LOL! But its probably like my pink salad... sounds weird but tastes great!
