    Question Best ROCKY ROAD recipe please ...........

    Hi all,

    My girlfriend's hubby loves rocky road and i wanna surprise him with some homemade rocky road seeing i always spoil her with my lemon slice

    ... as i'm not a huge fan of rocky road could you all throw me your best Rocky Road recipes pretty please

    check out the harry's rocky road website...YUM!! Some delicious ideas there!

    When I've made Rocky Road I use milk chocolate, the raspberry lollies cut in half, marshmallows chopped up and sometimes sultanas. Just melt chocolate and mix together, pop in a slice tray and put in the fridge to set.

    (is it best to get Pascall brand marshmallows that have alot of flavour ??)

    I make my rocky road with the bellybelly fudge... then I add some halved lolly raspberries, marshmallows and peanuts. It is brilliant!

    wow sounds yum, say what's bellybelly fudge ?? and do i use raw peanuts or unsalted ?? (does it matter, sorry i have no idea )

    .............. and What brand of Milk Chocolate do you recommend ?? (i don't wanna buy choc that's too expensive IYKWIM )

    He has a FUN sense of humor & a bit of a big kid like me so any fun ideas would be SUPER too

    I take Dark Compound cooking chocolate (the homebrand kind _ and melt an entire large block.

    I melt it in the microwave in a pyrex dish, I take it out every 30 seconds and stir well and again until its melted. I then mix in 1 cup coconut, then 1 packet homebrand rasberries, 1/2 pascels marshmallows and nuts if necessary, but not always. I would use an unsalted peanut or walnut if it were me. Then I mix it all up and press it into a slice dish. I then melt 150gm white chocolate. I pour it over the mix. In the fridge/freezer for an hour and bam.... rocky road.

    The one I do is melt dark choc, and melt white choc (with a TBSP or so of Peanut Butter) then I mix whatever I want into the dark choc (I like raspberry lollies and baby marshmallows), and add some coconut to the white choc and then pour the dark choc into a dish and dot with the white then take a skewer and swirl and you have a swirly yummy rocky road.

    Fudge
    3 Cups choc melts
    1 1/2 tsp vanilla essence
    40g unsalted butter
    1x 395g can sweetened condensed milk

    I usually leave the vanilla out and add extra chocolate. I use 1.5 blocks of Cadbury chocolate. As I mentioned in my PP, I add the raspberry lollies, marshmallows & nuts to make it rocky road fudge.

    I use cadbury milk chocolate, snakes alive cut up (great colours too!), marshmellos cut, a bit of coconut droooooooool its sooooooooooo good!!!! (Its actually my older sistsers recipe so I wont take credit LOL)

    Yep, love the lolly raspberries in my rocky road.

    Also, use shredded coconut, rather than dessicated - much better texture.

    And, my favourite, is to use special k cereal, instead of or as well as nuts - delicious!

    It's really just a melt and mix thing - no special recipe, just melt your chocolate and allow to cool a little (so your marshmallows don't melt), add your chopped raspberries, coconut, special k, nuts, etc, pour into tin and refrigerate. Easy!

    I'd use the good marshmallows smiles4u...they're much nicer and have the right texture! And yes I forgot about coconut!

    ... well so far i picked up the Pascall Marshmallows as they were on special at Coles until yesterday 2 for $4 ... now just gotta get the other ingredients now hee hee !!

    YES, YES to the snakes alive!!!!!! awesome, best ever rocky road I have eaten had lolly snakes in it and that's now how I make mine. I just melt a block of cadbury and add however much of the other stuff to suit, usually lolly snakes, mini marshmallows (so I don't have to cut them) and then coconut. You can play around soooo much with different things in rocky road...YUM, YUM. Also you can add peanuts but I leave them out as sooo many people have reactions. I made some for a birthday party once and one man was so grateful I left out the peanuts as he loves rocky road but can't eat peanuts.

    well i just used the homebrand red rasberried pascals marshmallows homebrand cocunut and next time i will be useing nice chocky as this time i used a cheap one but still omg yum
