Has anyone made strawberry lamingtons. I'm making some chocolate ones today and thought I'd do some strawberry aswell coz DH likes them but I've never had them. What do u use for the strawberry flavour?

Ingredients
Method
- 8 eggs, separated
- 2 yolks
- 190g caster sugar
- 80g plain flour
- 40g cornflour
- 40g butter, melted, cooled
- 5ml (1 tsp) vanilla extract
- 100g desiccated coconut
- Strawberry icing
- 30g unsalted butter
- 4 tbs strawberry jelly crystals
- 300g (2 cups) icing sugar, sifted
Notes & tips
- Preheat oven to 180?C. Grease and line a 30 x 18cm lamington pan.
- Place 10 yolks and 90g sugar in a bowl and beat until pale. Transfer to a large bowl. Sift the flours together, then fold into the yolk mixture.
- Fold in butter. Beat eggwhites with remaining sugar and vanilla. Fold half the eggwhites into yolk mixture. Fold in remaining eggwhites. Spread into pan, bake for 15 minutes. Remove from oven, cover with a tea towel.
- To make the icing, place butter and jelly crystals in a bowl, pour over 250ml boiling water and stir to dissolve butter. Sift in icing sugar, whisk until smooth. Set aside to cool slightly. Cut sponge into 12 squares, dip in the icing, then roll in coconut.

oooh....they use jelly crystals, I wouldn't have thought of that.
Don't have any now though, damn. I do have some strawberry quick, I wonder what that would be like.
you can always test it out and see what happens. If the first one or 2 dont look/taste right you can do the rest with chocolate.
Most strawberry lamingtons are made with Jelly crystals, just like Jelly cakes :) You don't really need to make an icing though, you can just use the jelly crystals (prepare according to instructions) and dip it in when its syrupy (not hot and running but just starting to set) this works just as good, just like you would with Jelly cakes :)

Ok well I don't have any jelly so I will have to get some and try that next time! I did make some with quick, DH likes them. I'm not so much of a fan but maybe it's coz I just like the chocolate ones a lot!! And the strawberry just don't match up.

I just bought deceptively delicious and they have devilled eggs in there (with hidden cauliflower or carrot)
Ingredients:
6 large eggs
2 tablespoons of reduced fat mayonnaise
1/4 cup of cauliflower or carrot puree
1/8 tsp salt
pepper and paprika to taste and for presentation (optional)
Directions:
1- place the eggs in a saucepan and add cold water to cover. Set the saucepan over high heat, cover, and bring to boil. Immediately remove from heat and let stand, still covered, for exactly 15 mins. Drain eggs, cool under cold running water, and peel.
2- cut eggs in 1/2 lengthwise and remove yolk. Put 3 yolks in a bowl and discard the rest.
3- add the mayo, vegetable puree, and salt, and mash together with a fork.
4- fill each egg half with the yolk mixture.
Oooo forgot to add, mini meatballs with nice dipping sauces. And don't forget mini risotto balls (AKA arancini balls)
