I just bought deceptively delicious and they have devilled eggs in there (with hidden cauliflower or carrot)
Ingredients:
6 large eggs
2 tablespoons of reduced fat mayonnaise
1/4 cup of cauliflower or carrot puree
1/8 tsp salt
pepper and paprika to taste and for presentation (optional)
Directions:
1- place the eggs in a saucepan and add cold water to cover. Set the saucepan over high heat, cover, and bring to boil. Immediately remove from heat and let stand, still covered, for exactly 15 mins. Drain eggs, cool under cold running water, and peel.
2- cut eggs in 1/2 lengthwise and remove yolk. Put 3 yolks in a bowl and discard the rest.
3- add the mayo, vegetable puree, and salt, and mash together with a fork.
4- fill each egg half with the yolk mixture.
Oooo forgot to add, mini meatballs with nice dipping sauces. And don't forget mini risotto balls (AKA arancini balls)

* 1/2 cup butter, softened
* 3/4 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup milk
* 1 1/2 cups blueberries
*
* 2 tablespoons all-purpose flour
* 2 tablespoons brown sugar
* 1/4 teaspoon ground cinnamon
* 2 tablespoons butter, chilled
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. In a separate bowl, stir together 2 cups flour, baking powder, and salt.
3. Stir the flour mixture into egg mixture alternately with milk. Fold in blueberries. Spoon batter into prepared muffin cups. In a small bowl, mix together 2 tablespoons flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping over unbaked muffins.
4. Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.

These are sooo good, so light and flavorful. I usually add in a little lemon zest with the vanilla, and I make my streusel with oats, wheat germ, a little honey and drop it on. Maybe not the healthiest recipe ever, but its not awful either. DH loves them, calls them Happy Cakes. I'm having one for tea right now...:p

I quite like cucumber slices (lebanese, unpeeled, sliced thickly), topped with flavoured tuna, or cottage cheese with sundried tomatoes, or similar. Healthy and refreshing.
I've also made vietnamese noodle rice paper rolls for a more substantial afternoon tea but these can be a bit messy to eat so provide plates or napkins.

DH and I were doing the F&V shopping today and they had a sign saying they now have black truffles (not talking the choc kind here! ;)). I won't freak you out with the price but DH did mention that he would LOVE to try some and I'm thinking of getting a little to treat him. But I don't know how to cook it or what to do with it... I'm not willing to buy any until I have some sort of an idea!!!! Anyone know how to cook with them or what to do with them???
Are they the Australian ones? I remember seeing a story on his Australian guy whos growing really good truffles!
Cant help you out with any recipies, will ask DH, his cousin is a chef and I know he has cooked them before.
Ooooh - thanks Rayray!!! I think they were Russian? I think the sign said "Black Russian Truffles" but I'm not entirely sure... I'm still amazed that they had them!

Yep I have a recipe, I'll post. Also if you get truffles make sure you get a truffle shaver or a mandolin to slice the truffles because they are quite potent and you don't want big chunks. You could finely chop it but I find the fine slivers are nicer. Truffles have the texture of a walnut but the flavour of nutty parmesan flavoured mushroom.

How's this for an easy recipe???? melt some chocolate, however much you want & then add in muesli until you think it's right LOL! I got it from another website & it said pretty much that. So I'll see how it turns out. The muesli I had was apricot & almond, so I can at least pretend they're healthy ;)

Choc Mint Balls?
PREP: 5 minutes
2 minutes eating time!
1 packet of Mint Slice Biscuits finely chopped
1/2 can Condensed Milk
3/4 cup Coconut
Extra Coconut for rolling
1. Mix all ingredients together.
2. Form little balls and roll in Coconut.
3. Store in fridge.
Serve chilled. Yum!

I have a similar recipe - it is for a choc mint log though. Going from memory it is:
1 packet of choc ripple biscuits
1/2 can condensed milk
1 peppermint crisp.
coconut to coat
I whizz the biscuits and peppermint crisp in the food processor, add the condensed milk. Form into two logs, coat with coconut. LEave to harden in the fridge for about a day if you can wait that long. Slice into pieces whatever thickness you desire.
It is a CWA recipe from their blue recipe book. Recipes from Australia wide. I am not at home so I can't double check the recipe or the name of the book. but it is very simple, and yummy.
I just found this yummo basic biscuit recipe. I only made half the mixture though and it still made 30 biscuits.
2 cups brown sugar
1 cup melted butter
1 teas vanilla
Mix together and then add:
2 eggs
3 cups SR flour
I also added to mine some rice bubbles, choc chips and crushed peanuts..mmmmmm, but you could put in whatever you like.
Mix well - roll into small balls (teaspoon size), place on greased tray, and press with fork.
Bake in moderate (180C/350F) for 10-15 mins.

thanks for the recipe, i was thinking of making some biscuits with the kids, they both like different things so with this mix i can divide a bit each and they can add the bits they like, should make for some interesting school holiday creations.

Well I was baking ANZACs last year to send to my DH in Afghanistan so I'll be the first to say definitely sacriligeous!!! :) Perhaps if you add the choc chips for a "soft" version of the ANZAC you could call them "ozsoldierswhohaveneverserved" biscuits :lol:. And if you add nuts they could be "ozsoldierswhocamehomewithmentalhealthissues" biscuits. PMSL (*has moment of complete defence wife humour with herself*)

I was laying in bed last night thinking about what I could cook for morning tea for my DH and kids... and knew I had all the ingredients in the pantry for ANZAC's... but completely forgot when I woke this morning... now I know what I am making for afternoon tea :)

Well I just had a look Tan and there sure are some dang fancypants ANZAC recipes in there :think: - hmmmmm "Anzac tart with macadamia praline & cinnamon syrup" sounds nice! Raises the bar a bit, doesn't it LOL!
Hahaha! That's what I was thinking too and I'm not the best cook in the world so I want something simple! The one I have is the same as the one Chloe posted so I should be ok!!!!
