For any budding cake makers, I am attempting to make a crocodile cake for DS's birthday and I was wondering what the best type of cake to use is.
I was going to cheat and get a slab of sponge made up at our local Woolies, but I don't know if sponge is the best option, will it handle being cut up and iced on the cut edges. For the amount I need the Woolies full slab of 40cm x 70 cm is just the right size.

It will work just fine if you freeze it for a bit before carving, also make sure you do a crumb coat (also while frozen or very cold - after carving abviously lol) and that will ensure no crumby bits get into the top layer of icing.
I use a vanilla butter cake or mud cake for my cakes that need building and that the clients don't want fruit cake.
Thanks for your replies everyone. I've decided to use a mudcake & found a local cake shop that will make one big enough. Can't wait to make it (I'm cutting a crocodile out of the slab) and eat it too. Yum yum![]()

Ive used the woolies sponge afew time for large cakes, and its great for cutting and shaping. Its quite dense, so its not very crumbly. I have never really had a problem icing them. Its very yummy too!!
