christmas cookies

I made sugar cookies today for ds1 to decorate. When baked the cookies puffed up and the shapes were kinda lost. Any suggestions of better biscuits to make that wont puff up ?

I make honey biscuits. They puff a little, but not so much that you can't tell what the shape is supposed to be.

Gingerbread don't puff at all. You can put less ginger in if DS doesn't like it.
