    Talking Crusted Butterscotch Apple Sponge!

Here's a recipe I got off the back of the caster sugar packet and thought I would try out..... YUM!

    Crusted Butterscotch Apple Sponge.
3 Cups (1 Large can) Chunky lightly stewed apple (Not too soggy)
    3/4 Cup Caster Sugar
    2 Tablespoons brown sugar
1 teaspoon caramel (or vanilla) essence
    3 eggs
6 tablespoons self raising flour (sifted)

    METHOD.

Preheat oven to 180 degrees C.
Grease 22cm baking pan or 4-6 individual ramekins.
Place the apples in the dish/es, sprinkle with the brown sugar & caramel essence, stirring to mix through. Set aside.
Beat the eggs, adding the caster sugar slowly until the mix becomes thick and creamy.
    Gently fold in the flour.
    Pour mix over the apples.
Bake for 45-55mins (1 Dish) or 30-35mins (Ramekins).

To serve, dust with icing sugar & serve with whipped cream.

    YUMMO!!!
(You can also substitute any fruit for the apples).

Not bad for off the back of the caster sugar packet!!!
