i have no plain :rolleyes: yep as most of you would know im hopeless at cooking and would not know the difference in flours lol. hehehe just relized i dont have baking powder either ...some one shoot me
I'm not sure .... I would imagine you could as thats what baking powder does to plain flour...

Actually I have only ever used SR flour with them. I never use plain when it is used with a raising agent- that's why I buy SR flour!! So yes, it works beautifully. And the 24 that it makes are large muffin sized ones, not patty cake size from our childhood!

Ok I'm going to make these too. I bought a vanilla cupcake from The Cupcake Bakery in at Melbourne Central last weekend and I wasn't that impressed actually. Too dry and flavourless. I'm a vanilla snob though... they probably used imitation vanilla essence to increase the profit margin... I'll be using the real thing ;)
You really need the real thing BUT....if you only have imitation you use half as much again :)
If you like these ones I posted a recipe for Chocolate Flourless ones.....they are so fudgy and yum :)
Bath I'll have to make you some vanilla cupcakes that will make your toes curl ;) And Vanilla Buttercream that just melts in your mouth... ;) The cupcake bakeries in the city suck bigtime... biggest waste of money I've ever spent on food in my life. Blerk! We ended up having a cup-cake-off at my house and I won HAH!
Oooooh sounds delish Cai! :dance: And yes! Probably WAS the biggest waste of $3.50 (for 1 cupcake) that I have ever spent in the city too! And they weren't even that creative with the icing. Sure the cupcakes looked pretty all laid out but there was no follow through. Hmmm... what goes nicely with cupcakes other than coffee? Is there such thing as a vanilla liqueur? If so i'll bring a bottle for your efforts!

I made these the other night and I think I might have stuffed them up. I forgot the milk. Then as I was mixing my "dough" I thought "MILK", so I added it, but it kinda look all curdled. They tasted nice, just the final texture seemed wrong after they were baked. :doh:
Bath I spend extra on decorations for mine but just with ingredients and cupcake papers about 30c or something ridiculous like that.
I find I normally get about 30 out of a batch....
I have made them numerous times as I mentioned previously but made them on Sat and they went flat on the top, whereas they usually rise really well for me with a real 'hill'. Was a bit disappointed as I followed the recipe as I always do but they were still great. I made a butter cream and added lemon juice which made it like a cream cheese icing.
I always use salted butter in baking and can't tell the diff.
Bath- have you ever made your own vanilla essence with vodka and vanilla bean?
I get 24 cupcakes from my mix but I use the large muffin size papers.

With salted butter... recently I have stopped using it with sweet baking. Once I did notice the saltiness and ever since I have kinda been sensitive to it.
Definitely use unsalted butter. And if you want really GOOD cupcakes go the foil lined ones as they do make a difference in how they cook. And if you want a REAL kick, get the vanilla bean paste and use that instead of vanilla essence its AMAZING... And another tip is a bit of lemon zest added to the butter stage (when you're creaming with the sugar) there is something about a hint of lemon that freshens the cupcake batter (yes you can still add the vanilla bean paste) and just really makes it yummy!

My buttercream icing I might just hold onto for a little bit longer but let me tell you its light and fluffy and not at all grainy...

Oh My God! It's 6:30am in Perth and I've done nothing but read this thread, google where I can buy the cookbook from and try to re-arrange my entire day to fit in going to the shops to hunt for the book, buying ingredients and making cupcakes!!!!! :rofl:

Not quite sure I know what you are asking for - as in the topping so its not so childish? or Adult Themed like boobies ??
I guess the easiest would be to turn the cup cakes into butterfly cakes. Cut a small circle out of the top of the cup cake, fill the hole with cream, ganache etc then take the cut out section and cut that in half and replace like butterfly wings then lightly dust icing sugar over the top.

What are some flavours or adult desserts you like?
What about Lemon Meringue cupcakes... vanilla & lemon cupcake, filled with lemon curd cream. Then pipe on some meringue (after the cake is cooked) the best meringue to use is pasturised meringue, where you get the egg whites and the sugar and melt over a double boiler until the crystals have dissolved (whisking lightly) and then whisk to firm peaks with an electric mixer. Once you have firm peaks pipe (you can use a zip lock bag and cut the corner) the meringue onto the filled cupcake and then if you want to you can blow torch the meringue for colour but you don't need to cook it as its already been pasturised over the double boiler!

- lemon yoghurt cakes (I'm sure they are called something much yummier, but they are great- greek yoghurt in them which gives this lovely tangy but sweet flavour combined with the lemon)
- banana passionfruit muffins
- honey ginger muffins
- hazelnut liqueur mud muffins
- raspberry yoghurt crumble muffins
I'm guessing you mean something a bit more grown up than just icing & sprinkles for the adults? Though keep in mind kids will still prob want to eat them also....they always want everything but what's for them LOL.
Ahhh lots of things, butterfly cakes are always a winner. Mudcake cupcakes, or caramel cupcakes yuuuummm. ooooh I have a recipe for toffee apple cupcakes.
LOL NaeNae, first thing I thought of was boobies! I once iced to cupcakes in a nice light pink & topped each with a raspberrie lollie in the middle & put together for DH birthday...very cute boobies.

G?teau au Yaourt is one of my faves. Whilst they are not technically a cupcake still very yummy! Apple and Maple G?teau au Yaourt is probably my fave! In normally do them in friand moulds and dust with icing sugar!

For example (I should have mentioned this before but I'm always clingy to a new recipe I've mastered/designed myself ;)) Today I'm making a very yummy batch of cupcakes with a recipe I've concocted myself specifically for the kids godparents who have recently become obsessed with poached pears in red wine & nutella calzones from their local. So I'm making lemon vanilla cupcakes with poached pear in red wine swirl and nutella cream cheese icing...
So if you have a favourite cake or dessert you can turn it into any cupcake! Play with fillings and icings.

How about cappuccino cupcakes? Coffee flavoured cupcakes with a (unbaked) meringue 'froth'. I've made these, and are always asked for by a friend of mine.
my personal favourite is white chocolate mud cupcakes with whole raspberries in them....we had them for my wedding cake. A great cupcake recipe book is the crabapple cupcake bakery book..she is famous for her cupcakes at the markets here in Melbourne and recently published her recipes...book is reasonably priced too from memory....
