    Thats not cake though... cake is not meant to be dry and crumbly But I guess you know that now LOL!

    Don't worry I grew up in a household with microwave cakes *shudder* And I didn't know what buttercream was till I made it myself.

    But yay for being able to make lots of yummy things!

    That is a great recipe- I have made them a number of times. Did you get the recipe from the Crabapple Bakery Cookbook? I don't love all the recipes in there but this Vanilla one is easily the best vanilla cupcake recipe that I have made. I halve the icing and palette it on rather than swirling it on as the 8 cups allows you to do. I might just make these tomorrow- thanks for reminding me!

    dummo here sneaks in to ask if i can use s/r flour
    i have no plain yep as most of you would know im hopeless at cooking and would not know the difference in flours lol. hehehe just relized i dont have baking powder either ...some one shoot me

    I'm not sure .... I would imagine you could as thats what baking powder does to plain flour...

    Give it a go - can't hurt

    Actually I have only ever used SR flour with them. I never use plain when it is used with a raising agent- that's why I buy SR flour!! So yes, it works beautifully. And the 24 that it makes are large muffin sized ones, not patty cake size from our childhood!

    Nope easy as

    ok so it works best as a layer cake (just 2 cakes joined with buttercream in the middle)

    so just lightly grease 2 x 20cm cake tins (one at a time if you only have 1)

    bake for 35mins until a skewer comes out clean.

    If you don't want to do it as a layer cake just bake 2 cakes :-) - you can freeze the uniced cake...
    Does the ingredients in the first post make two 20cm cakes? Or do you have to do a double batch?

    I was thinking of halving the cake mix batch and icing it on top? So I would halve the recipe you gave to make one 20cm cake right?

    am I making any sense?

    yep your right on track the mix makes 2 x 20cm cakes
    So halving it will work in theory

    Will it make much of a difference if i use salted butter, as I haven't any blocks of the unsalted?

    I have to make about 4 dozen for my dd's class tomorrow - they're doing an RSPCA cupcake fundraiser. (by the sounds of it I might have to make extra to keep at home - i can't wait to taste them!)
