Hello all,
Its my Mums 50th on Monday and me and my sister are having a dinner for her tomorrow night. I know its short notice but I only just thought of it now that someone on here is bound to have a few ideas. Mum is diabetic but also can't really handle dairy products but we would like to be able to do a Birthday cake or some type of yummy dessert in its place that she would be able to enjoy.
With short notice in mind has anyone got any good recipes that may be
suitable?
DUTCH APPLE CAKE
Sift together:
1 cup sifted all-purpose flour
11/2 tsp baking powder
1/2 tsp baking soda
2 tbsp. butter OR margarine (you could use soy margarine instead)
1 large egg, well beaten
1/2 cup unsweetened concentrated apple juice
1/2 tsp vanilla
3 apples, peeled, cored and cut into wedges
Put all dry ingredients into a bowl. Add margarine and rub flour into the butter with your fingers until it resembles breadcrumbs. In separate bowl add the egg, apple juice and vanilla, mix well and add to dry ingredients. Mix just enough to moisten flour. Pour into lightly oiled 8" nonstick square pan.
Dip wedges in unsweetened concentrated apple juice. Place in parallel rows with sharp edged pressed into batter. Sprinkle with a mixture of:
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1. Bake at 350F until apples are tender, approx 30 to 40 minutes.
Sugar Free Cake
INGREDIENTS:
2 cups raisins
3 cups water
2 eggs
3 tablespoons liquid sweetener
3/4 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 cups all-purpose flour
1 cup chopped walnuts
1 cup unsweetened applesauce

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt or tube pan.
In a saucepan combine raisins with water and cook until the water is absorbed, cool.
Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener. Mix well. Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture. Stir until just combined. Mix in raisins and chopped nuts. Pour batter into prepared pan.
Bake at 350 degrees F (175 degrees C) for one hour.
Lime Cheesecake Ice Cream
1 can evaporated milk
1 can sweetened condensed milk
2 cups milk
2/3 cup heavy cream
2 egg yolks, beaten
1 cup white sugar
1 cup lime juice
1 pack lime flavored jelly crystals
6 chocolate ripple biscuits
In a saucepan over low heat, combine the evaporated milk, sweetened condensed milk, milk, and heavy cream. Cook until warm, whisking frequently. Once the mixture is hot to the touch, whisk in the jelly crystals and sugar, stirring constantly until sugar and crystals are completely dissolved. Whisk in the egg yolks, and remove from the heat. Stir in the lime juice.
Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. This recipe takes a bit longer to set than the usual ice cream.
Once the ice cream is thick, open the canister, and place small pieces of chocolate ripple biscuit evenly on each side. They will not break into smaller pieces as the machine churns so make them reasonable pieces. Mix for about 5 more minutes. Transfer to a freezer container, seal, and freeze until solid.
By changing the jelly and juice flavours you can make this decadent creamy ice cream almost any flavour. And by using low fat milks you might feel less guilty about eating this, but I don't know if it will alter the texture in any way.
If you don't have an ice cream maker, (I don't - yet) you can put the ice cream in a container in the freezer, and take it out every hour or so to whisk it.
This is the most creamy decadent ice cream I'm made yet, and those of you who remember me will know how much I like making ice cream ;)

Danni, get a packet of scotch finger biscuits, a tin of nestle top n fill carmel and a tub of cream. Also, I hope you have a rectangle or square container to put it in.
OK;
Layer the scotch finger bikkies in the bottom of the tray/container. empty the carmel into a bowl and mix together to smooth out lumps. Pour onto the biscuits and smooth out. Whip the cream and put on top of the caramel. Put in the frige for about 1/2 to 1 hr. Slice into squares or rectangles and serve (easier to leave in the container and they can get it out.) Easy Peasy and yummy!
oh sherie that sounds so nice but i forgot to mention i cant eat cream :S
i have just put on some tupperware triple choc muffins..too bad if they arent good enough for the rich snobby people! lol
Bummer, sorry Danni. When the muffins are cool, put some nice icing and some shaved chocolate on top or crumble a flake over it - very classy LOL.
oooohh icing! ok i got icing sugar...but how do u make a nice icing? i dont have any chocolate to shave..what about chocolate powder from my cappucino thingy?
That will do nicely.
Mix about 1 cup of icing sugar with 1 tablespoon of butter/marg and about 1 tablespoon of milk (you may need to add more milk), mix it all together with a fork until it is all come together in a thick paste. Put it on the muffins and put some chocolate powder in a sifter and sift over the top.

hey guys, am wanting a cheesecake recipe which doesnt have any cream or condensed milk in it.

I saw a recipe for this posted ages ago, but couldn't find it when I searched for it so I thought I would post this other one I found. They were a big hit at my PND Therapy Group.. LOL..
Home-made Ferrero Rocher
You need:
400 grams milk chocolate melts
1 tblsp copha
1 small pkt hazelnuts or almonds
1 jar nutella
Approx 10 wafers
Crushed nuts
Method:
Melt chocolate and copha in glass jug.
Medium microwave (2-3 mins).
Rough crush wafers add to chocolate.
Place 1/2 teaspoon of chocolate mixture in each space of ice tray.
Place nut in each cover with nutella.
Fill with remainder of chocolate.
Sprinkle with crushed nuts on top.
Set in fridge 20 to 25 mins.
Yum, these are DH's fav's so I'm going to try them out this weekend for a suprise for him. I hate cooking and usually burn or destroy everything!

Raspberry Cheesecake
serves 12
Base:
15 Arrowroot biscuits
1 tbsp reduced far margarine
3 tbsps skim milk
cooking spray
Filling:
300g pkt frozen raspberries
500g cottage cheese
125g reduced fat cream cheese
1 tsp vanilla essence
1/2 cup sugar
9g pkt raspberry low joule crystals
1 tsp gelatine
1/3 cup boiled water
Fruit Topping:
raspberries remaining from filling
1/2 cup water
1/4 cup sugar
1 tsp gelatine
Base:
Melt margarine. In a food processor crumble biscuits, add milk and margarine and blend together. Coat a 22cm springform pan with cooking spray, press biscuit mix into base using plam of your hand. Refrigerate.
Filling:
Clean food processor bowl, add cottage cheese, blend until very smooth. Add cream cheese and blend. Slowly pour sugar in and mix until dissolved. Add essence and 1 cup of frozen raspberries, blend well. Combine jelly and gelatine in boiled water until dissolves, pour into blender, once ingredients thoroughly mixed pour over biscuit base and refrigerate until set.
Topping:
In a small saucepan combine remaining raspberries, water, sugar and gelatine. Just bring to boil and leave to cool slightly. Gently pour over cheesecake and refrigerate until set.
Nutritional Information:
per serve, total fat 4.6g, saturated fat 0.5g kilojoules 747, carbohydrates 23g, sodium 132mg, fibre 2.5g, protein 11.2g.

I need a nice and easy but impressive dessert to take to a dinner party.
It cannot contain cream.
I was wondering if anyone knew of any custard recipes? Id love a tiramisu that could be done with custard?

I don't know if you could do tiramisu with custard. As tiramisu has mascapone cheese and cream in it. You could do a trifle and leave the cream off the top. Ummm some kind of pie. Apple crumble, you could take custard to go on the top. Ummmm a self saucing pudding. Bread and butter pudding which has an egg custard base.
This is one I make at Christmas, but is good at anytime.
Mock Christmas Mini Puddings
1 Black & Gold or home brand ready made fruit cake
1/2 cup brandy/port/whiskey/rum, basically your sprit of choice
1.5 cups White Chocolate Melts
1 packet Glace Cherries
Crumble the cake into a bowl and mix with the booze until it all comes together like dough (you may need a little extra water). Scoop about 2 tablespoons of mix and roll it into a ball until you have used all the mix (can't remember exactly how many it makes - depends on the size of the cake). Put in the fridge to firm and chill. While they are chilling, get the white melts and put in a pan and melt over low heat or use a double boiler (1 pan over the other with boiling water). When the chocolate has melted, get the balls out of the fridge and spoon the chocolate over them letting it dribble down the sides like custard would and put a glace cherry on top (you can halve them if they seem too big). Put back into the fridge for the chocolate to set. Serve with warm custard.
Easy Peasy.
What about mini puddings like butterscotch puddings? YUum..
how far does it have to travel, and is it just no cream, or no dairy?
MY friend made ice cream sandwiches, with partially softened/melted ice-cream and sandwiched them with wafers, then re-froze.
Hmm, but with it being winter and all, maybe you want something a bit warmer..
Danni - i have a great 'Baked Brown Sugar Custards' Recipe - by one of my fav's Bill Granger...really easy and hardly any ingreds.
5 egg yolks
80g (1/3 cup) brown sugar
500ml (2 cups milk)
3 teaspoons natural vanilla extract
Preheat oven 160 deg. Place egg yolks and sugar in bowl, whisk to combine. Place milk and vanilla in saucepan over med heat and bring to boil. Remove from heat and gradually add milk to eggs, whisking constantly. Skim off any foam that rises to top.
Place 4 oven proof ramekins into a baking dish. Divide mixture between ramekins. Pour hot water into baking dish halfway up the sides of ramekins and then cover with foil. Bake for 45-50mins, or until custards are set. Remove custards from baking dish and leave to cool slightly before chilling for 2 hrs (but for those who like warm custard - serve when warm). Serves 4
Could prob sprinkle a little brown sugar and/or cinnamon on top for added effect. I make HEAPS of Bill's desserts (i usually don't bother making desserts) and they are soooo easy and tasty.
I bought ramekins (1 cup equiv) at freedom for $2 each and i use them all the time - worth buying!
Or what about profiteroles with a choc - liqueur sauce ...and strawberries on the side?
I have a recipe if u like or u could buy the packet ones - i think 'white wings' makes a good one with a custard filling.
Hi Danni, my mum makes this dessert, not sure what it's called (something along the lines of plum pie but fancier). Basically it is a big jar of plums that are cooked in a syrup. Then for the crust you get puff pastry, put some egg yolk and brown sugar on it, then cut out long 'sails' (long triangles if you can visualise) and bake them in the oven. It is served by putting some plums with some of the syrup into a bowl, then the crust sits on the top of the bowl. Can be served with cream, marscapone or ice-cream, or custard.
If that tickles your fancy at all I'll get the proper details. It looks very fancy and isn't much work (or cost).

Pavlova Cheesecake
Serving Size : 8
Icy Bubbles Crust:
1/4 cup brown sugar -- firmly packed
2 tablespoons condensed milk, sweetened
1 tablespoon maple syrup
60 grams copha
2 cups rice bubbles
Pavlova Filling:
1/4 cup cocoa
1 tablespoon cornflour
250 grams cream cheese -- softened
3/4 cup caster sugar
2 eggs -- separated
1 x 250g carton cottage cheese
1 teaspoon vanilla essence
Decoration:
whipped cream
jelly crystals
Preheat oven to 180C. Icy Bubbles Crust: Heat brown sugar, condensed
milk and maple syrup over a low heat, add copha and allow to melt.
Pour into a bowl and quickly stir in the rice bubbles. press into the
base of a greased 20cm springform pan and refrigerate until firm.
Pavlova Filling: Sift the cocoa and cornflour together. Beat the cream
cheese with 1/2 cup of caster sugar, then beat in the egg yolks,
cottage cheese, vanilla essence and the cocoa mixture. Whisk the egg
whites stiffly, gradually beating in the remaining of the caster sugar
until a firm meringue is achieved. Carefully fold in the cocoa
mixture and pour over Icy Bubbles Crust. Bake for about 45 minutes,
then turn of the heat and leave for about 1/2 hour then remove from
oven and run a spatula around the sides. Refrigerate until well
chilled, then lift onto a serving platter and decorate with whipped
cream and jelly crystals.
I have a recipe for a rolled pavlova (that is soft) & then filled with whatever you want ~ our most popular one is chocolate cream & chopped up strawberries. If it sounds something like this I'll hunt out the recipe for you if you'd like.
