    Easy biscuit recipe?

    Anyone got a yummy (but super easy) biscuit recipe they want to share? I promised DS I would make biscuits with him today when DD1 has her nap - but I can't find my normal recipe books in this mess of a house!

    I need ones with guaranteed success rates too Oh and ones that don't need much ingredients, I don't have much sugar left, or oats so anzacs are out, but I do have flour, butter and vanilla essence.. LOL

    Mel, I just found this one on the net - sounds yum!!

    Ingredients
    250g butter, softened
    1/2 cup icing sugar
    1 teaspoon vanilla extract
    1 egg, at room temperature
    2 1/2 cups plain flour
    1/2 cup cornflour
    Method
    Using an electric hand mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat until well combined.
    Sift flour and cornflour over butter mixture. Mix well. Divide in half. Press each half into a disc. Wrap each disc in baking paper. Refrigerate for 20 minutes.
    Preheat oven to 160°C. Line 2 baking trays with baking paper. Roll each disc out between 2 sheets of baking paper to 3mm-thick.
    Using letter-shaped biscuit cutters, cut letters out of dough. Place onto trays. Roll leftover dough together and repeat. Refrigerate biscuits until firm. Bake for 15 minutes or until light golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool.
    Notes & tips
    Hint: Dip cookie cutters into flour in between cutting each biscuit to prevent dough from sticking.

    this one sounds even easier!!

    185g butter (softened)
    3/4 cup castor sugar
    1 tsp vanilla essence
    1 egg
    2 cups plain flour

    Beat the butter, sugar & vanilla until pale & creamy
    Add egg & beat until combined
    Sift flour over and use wooden spoon to combine.

    From there you can add choc chips, sultanas, hundreds & thousands, coconut, nuts, make jam drops, pinwheels, blah blah blah - the list is endless.

    Bake them at about 175 degrees for 20 minutes (roughly

    Easy one we've made from cookery australian way. (I put full ingredients but I made half batch last time and that was plenty.)

    1 cup flour
    1 cup self raising flour
    1/2 cup butter
    1/2 cup caster sugar
    1 egg beaten
    1/2 teaspoon vanilla
    milk

    Sift flours.

    Cream butter and sugar. Add egg, vanilla and mix well.

    Add flours and mix into firm dough

    Lift onto lightly floured board and knead until smooth

    Roll to 5mm thickness and cut out shapes

    Glaze with milk

    Bake at 160C until biscuit pale color (10-15mins)

    Cool and dust with icing sugar if desired.


    oh and if you have cocoa you can replace 3 tablespoons flour with 3 of cocoa for chocolate biscuits.
