I've had so much self control not making this up until this point.
All that self control has gone out the window today though. I've made a batch of choc chip cookies and now the fudge with peppermint crisps. Now I'm waiting patiently for it to set in the freezer!
Oooh, I made this for my book club last night again... they all love it! Then tell me they're all on diets... well, Mel's the evil one, not me!
Does anyone else think they'd make twice as much if they didn't have to keep "testing" it whilst it is cooking away?

OMG this is so nice. I made some fudge using milk chocolate and mini m&ms, I gave some to a friend to cheer him up and he said it is better than sex LOL

I prefer it with milk chocolate - usually 350g milk choc and 100g dark choc when I make it.
I've just made it with sweetened condensed rice milk!!! It worked! Yum I can't wait to eat it! So I used dark chocolate (without milk solids) sweetened condensed rice milk and rasberry lollies.
Dairy free sweetened condensed rice milk
3 cups rice milk
1/2 cup sugar
1/2 tsp vanilla paste
pinch of salt
Pop it all in a saucepan and cook over a medium heat until volume = 1 cup!!! Thats it! YAY! I can have diary free fudge :D :D

*whistles innocently* Just made some dairy free fudge with candy canes crumbled and swirled through.....
I bought 3 cans condensed milk only to find when I got home 2 were skim. Will this make any difference to the fudge?
i've used skim in other things rivlas with little difference - maybe not so rich would be the only thing I could think.
I tried to cheat and melted the choc with the milk and butter in the microwave (I usually do this if something requires melted chocolate with success) - I don't know that it got enough heat to the condensed milk though. I didn't keep the mixture going until it was really thin for fear of burning the chocolate so although it has the texture of fudge it really just tastes like the choc with roast almonds that I used, doesn't have the extra sweetness of fudge - is this due to not long enough on heat so to speak do you think or is the apparent taste right and I was just expecting more of the condensed milk to come through in the flavour but it doesn't due to the quantity of chocolate.
still liked the taste of what i made just wondering whether I got it right or not by trying to sidestep the saucepan on the stove.

Are caramel melts like the chocolate ones? I've never seen them before. Jersey caramels might work Netix.
I have to get my caramel fudge fix before then though, now that i have fudge on the brain! I love fudge. I love the texture. I love the taste. I'm salivating atm LOL
Sorry, I'm laughing..... Yeah, caramel melts! What do you mean you haven't seen them?!?!? They are with all the other melts. Sometimes hard to find though (like the store might not carry them)

well i haven't seen them before i hun!
I just went to Safeway and in the cooking section, there were no other melts other than dark,milk and white chocolate. What i did find was this Caramel top n fill. It is made by the same people who make condensed milk and it comes in the same tin, so i'm going to use that instead of condensed milk.

I forgot about that top'n'fill stuff. Never tried it. Not game to! I'd probably eat the whole tin! I think you would probably need to use white chocolate with it.
TD who did it go... it sounds so yummy....
I made it last night but it was still slightly liquidy after a 2-3 hours in the fridge. I guess i did not leave it to heat long enough. I will re-heat it and try again tonight. I added some condensed milk too, because the caramel was too rich. The taste is to die for though!

How long before christmas can you make this if you're planning on giving them away? Do you have to keep them in the fridge if it's hot or do they hold together ok? Could I package it into cellophane bags and if so, would I need to put it in pieces or just as a (scored) slab?
I'd say it would keep in the fridge a week so I'd do it a few days before. I tend to make it in a plastic flat container lined with go between. I have one of the slice containers from Tupperware and it works perfectly because it has a lid. I would slice it before cellophane. Also nigella has an awesome fudge recipe that is just as easy with pistachio.
How long does it take to set in the fridge? Shops are all closed tonight and I want to make them for my Kris Kringle tomorrow at lunch time. If I made them at 8am would they be done by 12? Help please!!
