I just made some for DH's christmas morning tea tomorrow, with christmas M&M's and gold cachous. Looks very christmassy.

My advice is to make it in the microwave because it won't get as hot as on the stove top and you can chuck all the ingredients in at once. We didn't have any vanilla so I added a tsp of instant coffee to the condensed milk and nuked that together and beat it in. Also don't fret if it looks like it's not going to combine as you just stir it really well with a wooden spoon and it will. I did 30 second bursts and stirred each time.

I was wondering how I should decorate it! What are Christmas M&M's? :hide: Do you just put them on top before it sets? Or do you wait until it is set, then cut it and then decorate the individual pieces?

I was thinking about roasting some crushed nuts (almonds or peanuts) and then adding those on top. But I'm not sure yet :D I need inspiration!!

Christmas m&m's are out at the moment they are green and red only. I just poured a whole heap in and stirred them into the fudge, then I decorated the top by organising them in a pattern and sprinkled the top with cachous. I pushed them in so they set in the fudge, as the fudge is like playdough when it sets so it can be hard to get stuff to stick to it.

It will definitely be set. I just cut mine up about 15 mins ago and I probably made it at about 3 hours ago.

Well, it's in the fridge now. I hope I did it right. How long do you normally leave it on the stove for? Just until everything is combined? I wasn't sure, and I didn't want to burn the chocolate either. It kind of 'came away' from the sides of the pot. Is that right? Ahhh I'm scared!!! :o No time to make a new batch so this one will have to do!

Oh, and when I went shopping I had some great ideas for when I make the fudge for just DP and I... like using Chilli chocolate... I reckon that would be wicked. Or I saw some toasted coconut chocolate... I reckon that would be super nice too. Gotta love experimenting! ;)

I thought of that then realised I only have the really crappy coles brand one that is better used as tracing paper :lol: I realised if i cut a piece then use the barbie mate thingo to pull them up it works okay. It's semi presentable for playgroup tomorrow but I think everyone will have a good giggle at my screw up :p I've learnt to laugh at myself doing stupid stuff. the first trimester brainlessness combined with DD toddler makes me mega ditzy right now :p

I thought I should come back to update. O M G ! ! ! :o It was sooooooooooooooooooooooo delicious!! And it turned out just perfect (consistency and deco lol). Everyone at the party was impressed :D Oh and DP really enjoyed the "cut offs" (the not-so-perfect looking pieces). But maybe next time I will plan exactly where I put the m&m's. It got kinda tricky when I tried to cut the fudge and there were m&m's in the way :rofl:

Crazylady: I didn't have any baking paper at all. I just sprayed the (non-stick) pan, and when the fudge had set I just turned it upside down and it *plopped* right out! :D
SugarDust: Because you can REALLY taste the chocolate, I'd say go for the good quality one. Not the cooking chocolate!

I've just made it with sweetened condensed rice milk!!! It worked! Yum I can't wait to eat it! So I used dark chocolate (without milk solids) sweetened condensed rice milk and rasberry lollies.

Dairy free sweetened condensed rice milk
3 cups rice milk
1/2 cup sugar
1/2 tsp vanilla paste
pinch of salt

Pop it all in a saucepan and cook over a medium heat until volume = 1 cup!!! Thats it! YAY! I can have diary free fudge :D :D

It is the BEST!!!!!!!! I made it with cooking chocolate, but not the compound stuff, the choc buds, mixed half milk and half dark, put in raspberries and m&ms. Drool much!!!!!

Ava loves the dairy free one but i'm not so sure myself.. i think personally i NEED the full on CHOC hit that comes from real heavy dark choc.. not the dairy free stuff... :(

I just wanted to come in and say thank you for this yummy recipe :clap:.

I made it for christmas day...and it was a real winner...everybody LOVED it!!!

I did 2 variations of it:-

The dark chocolate and peppermint crisp one.

And I'm not sure if anyone else had tried this....hence why I thought I'd share....just in case but I did a

Lemon Meringue Fudge...:o...it was even yummier :) !!! (though I didn't have as many testers on this)

I actually wasn't sure if it turned out ok so didn't take it to my family gathering...as when I made it - I kept tasting it to be sure but I just didn't think there was enough lemon to it. But turns out my tastebuds that evening when I made it was playing up (I had a bit of a sore throat anyway). But when I was clearing out the fridge to go away I gave it to my parents and they all...including my dad - who rarely eats sweets LOVED it!!!

So with the Lemon Meringue I used... along with the tin of condensed milk, 75gms of butter -
I used 500gms of white chocolate instead
and started with 1/2 teaspoon of lemon essence (instead of the vanilla).
I added about another tablespoon of lemon essence, but was scared of it turning to runny, so I then decided to use the rind of 1 lemon, but still didn't think it was lemony enough...and didn't have any more lemons so I took the chance and squeezed the juice of the rindless lemon in too...it was not runny at all.

A couple of days later...I got around to properly tasting it a few days later and it was definitely lemony (not overly strong either...so I think when I make it again...because I will it was that yummy...I might use another lemon rind maybe....will just keep tasting to be sure though...ahh the things you gotta do when cooking ;):ROFL:).

To finish it off I had made up some meringue (just the egg whites and castor sugar mix and into the oven for 10mintues) and placed it on top (though because I didn't think it had worked I think I waited too long to put the meringue on...cause it kept sliding off...might have to do so when both are still warm I think...unless someone here can recommend something :dunno:).

So once again thank you for such an easy and yummy dessert :thumbsup:.

Hi girls....quick question about fudge.

I made this the other day...and you are all right...bloody deeeeeeeeeeeeeeeeeelicious!

However, does fudge normally melt?

I left a few pieces in a container on the couch, and came back an hr or so later and they had melted a lil bit. Like sticky melted, not into a chocolate pool or anything..

Have I done something wrong? Or is this normal?

Just made this, its setting in the fridge. Sprinkled with silver cachous, looking very pretty. DH is excited lol
