    Wink Carrot Cake

    Hey ladies,

    I have carrots multipling in my vege draw so thought I would make a carrot cake, but I have never made one before.

    I want to try a recipe that I know is nice so I am after a recipe one of u have tried!!

    wish I had a recipe but I just eat the ones DH makes at our shop...and they are to die for yummmm...hope you get a great recipe

    Fair enough....I dont blame him, can he part with his cream cheese icing cause that is just as yummy too?? ;oP

    Off topic tho, where did you get ur pram/trailer thingy from in your little ticker picture?? I have started walking of a morning with the boys but I dont wanna kill my Strider Plus! Lol.

    Amelia its a croozer from a bike shop...it goes on the bike and converts to a pram...if you dont ride I would just get a phil and teds?

    We want to start riding after xmas but I wanna get a bit more fit before then so thought that one of those would be good cause it is multi use. Lol.

    I use this recipe, it's an old woman's weekly one. It's easy & delish!

    I don't put in the ginger, and I usually put more nuts in

    Pippa’s Home & Away Carrot Cake Recipe

    You’ll need

    1 cup self raising flour
    1 tsp bicarb soda
    ½ tsp ground cloves
    ½ tsp cinnamon
    1 cup firmly packed brown sugar
    1½ cups finely grated carrot
    ½ cup sultanas
    ½ cup glaced ginger (~125g), chopped
    ½ cup chopped walnuts
    2/3 cup vegetable oil
    2 eggs
    To cook

    Sift flour, soda & spices. Stir in sugar, carrot, sultanas, ginger & nuts then combined eggs and oil. Beat the whole thing for 5 mins then bake in a moderate oven for an hour.

    Icing

    60g cream cheese
    1 tsp lemon rind
    30g soft butter
    1½ cups icing sugar
    To cook

    Beat cream cheese, lemon rind & butter then beat in sifted icing sugar

    ETA: you don't really need to beat the mixture, just give it a good stir... it's far too chunky to use a beater!

    I use the one from the Moms who think website - google them and carrot cake and it will come up.

    Only thing i change is i use self raising flour instead of the baking powder/soda and plain flour (i find it tastes less salty) and half the sugar

    For the icing i just use a tub of philly and add some icing sugar (to taste) and some lemon zest if you are into that type of thing.

    it is easy and i havent meat anyone that has tried that doesnt like it.

    I also often top with berries (in winter i use the froze variety, but in summer i just chuck on whats around)

    Thanks guys....My mum gave me a recipe she uses for Carrot and Pineapple Cake.....I am going to make that and make Sibbie's one as well.
