Ok so i saw a recipe for some loveheart cookies for fathers day, they looked great, had icing in the middle and i was thinking i could make them and also add in some jam.... now do you think i can find the recipe?
So if you've seen something like this could you please link me the recipe or alternatively if you know of a recipe for the filling for in the middle?
basically it's 2 cookies baked seperately then you add in some jam and this filling and wedge together, kind of like a yoyo ???
Sounds like a monte carlo to me. I think a buttercream icing is probably what you are after. I have also seen cookies sandwiched with melted marshmallows (whoopie pies). Hope this helps.
For the filling its a buttercream icing and also Rasberry or Strawberry Jam.
If your butter cream icing gets a little stiff, add a few drops of milk to loosen it a bit
You could just use a standard recipie and then just cut them into heart shapes no dramas.. something like
125g Butter
125g Sugar
1 Egg
2 teaspoons of honey
1/4 teaspoon of vanilla essence
1 teaspoon of cream of tartar
1/2 teaspoon bi carb soda
2 cups plain flour
Filling
160g Icing Sugar
30g Butter
Few drops of Milk if needed
2 drops Vanilla Essence
Rasberry or Strawberry Jam
To make:
Sift together dry ingredients 3 times
Beat together butter and sugar until creamy
Add egg and beat well
Mix in the honey and vanilla. Add the dry ingredients.
(To make the heart shaped variant)
Roll into a ball and roll flat on a floured surface. Make sure dough is even thickness.
Cut out Heart shapes and place on a tray with baking paper.
Bake in a moderate oven for 15mins or till golden brown. Turn tray if needed. Allow to cool completely.
While cooking, beat filling mix until stif and pliable. If a hot day, work quickly cover with plastic and place in fridge until ready to use.
Once cookies are cooled, assemble with Jam on one side and filling on the other.
Sprinkle with Icing sugar to serve
