Can I pre-prepare crumble?
Can I assemble a crumble now and pop it in the fridge to bake at dinner time? Or will it make the crumble soggy?

I wouldn't.
You could combine the dry ingredients, and separately prepare the wet mix, then combine just before you need to use it.

Yep you can so long as the crumble isn't too wet, my granny does it this way all the time!
