    Icing advice.

    I have to make some cup cakes on Thursday for the school fete that is on Sunday.
    If I ice them will the icing still be ok on Sunday?
    This is the icing I was thinking of using

    150g softened unsalted butter
    500g icing sugar, sifted
    1/3 cup passionfruit pulp
    Yellow food colouring
    1 tbsp milk

    combine butter and icing sugar and beat until smooth. Add remaining ingredients and mix well.
    Should I swap it for a lighter glaze without the milk etc?
    How do I make such a thing?

    And while I have your attention.... are passionfruit cup cakes the right choice for the cake stall? I could make berry and ricotta muffins instead (but I don't know how well they keep). Or a chocolate cake. I'm making some brownies so I don't want to go too OTT with the chocolate.

    How about classic cupcakes with icing that you can decorate with sprinkles..like dinosaur or fairy sprinkles? Passionfruit ones may not go down well with kids, you could use chocolate chips even.
    I make a recipe from Taste called Classic Cupcakes..they last really well in an airtight container and I ice them as well. You could make the cupcakes the day before and ice them the morning of perhaps?
    The icing I have used is 1 1/2 cups pure icing sugar, food colouring of your choice, 1 to 1/12 tablespoons of water.

    I'm not sure. is the cake ok that far in advance? you can freeze muffins....

    I'm away for the weekend so I have to drop them off with the canteen on Friday morning.

    Maybe a mud cake would stay fresh better.

    I think you will find under the new food and health guidelines all food for sale, even for school fetes must be made and sold within a 24 hour timeframe they would have to be made on the Saturday. I know my SIL went through all this when she was on the Parent's committee and organising the school fetes. They have to have a permit to sell food even baked goods and there are guidelines attached...I would be checking this with the school before anything else.

    They're pretty clear about the Friday drop-off.
    Maybe they're more casual here than in Victoria...

    The canteen freezer is set aside for other food so they won't be frozen.

    Any chance you can make them Saturday? Otherwise make them, freeze them and defrost Saturday night. They'll dry out if you make them that early.

    I wouldnt ice them until Sunday morning. Buttercream needs to be refrigerated, which dries out the cakes. You could make the icing Saturday night, keep in the fridge and ice in the morning. You just need to soften it a bit first.

    It's usually adults buying cake things at fetes so passionfruit should be fine. Otherwise plain vanilla with coloured icing and sprinkles or smarties work well.

    ETA - just saw posts above. Anzac biscuits store well. Or honey joys.

    hmmm with the drying out issue..... now I'm thinking Rocky Road and/or choc - choc-chip biccies.

    I'd be more worried about the freshness of the cupcakes by Sunday - I find after the second day they are pretty stale.
