    Best type of cake to build with?????

    For any budding cake makers, I am attempting to make a crocodile cake for DS's birthday and I was wondering what the best type of cake to use is.

    I was going to cheat and get a slab of sponge made up at our local Woolies, but I don't know if sponge is the best option, will it handle being cut up and iced on the cut edges. For the amount I need the Woolies full slab of 40cm x 70 cm is just the right size.

    Please please pretty please let me know what has worked for you

    Don't know if sponge would be too soft to work with it & ice it without it breaking up. A denser type of cake, like a mud cake would probably work best & keep better to.

    It will work just fine if you freeze it for a bit before carving, also make sure you do a crumb coat (also while frozen or very cold - after carving abviously lol) and that will ensure no crumby bits get into the top layer of icing.

    I use a vanilla butter cake or mud cake for my cakes that need building and that the clients don't want fruit cake.

    Thanks for your replies everyone. I've decided to use a mudcake & found a local cake shop that will make one big enough. Can't wait to make it (I'm cutting a crocodile out of the slab) and eat it too. Yum yum

    Ive used the woolies sponge afew time for large cakes, and its great for cutting and shaping. Its quite dense, so its not very crumbly. I have never really had a problem icing them. Its very yummy too!!
