I really like Toby. I know an adult Toby and it never occured to me that it's not a 'grown up' name

TBH I personally have Coby in my list of bogan names so I don't really like it.
Same here. My friend's DH is Toby and it suits him still. I think Tobias is a great option though if you want a "formal" name too.
