Big hit here is peas - keep a bag of frozen peas in freezer - just put a few in mug with some water and cook for one min in microwave - cool down with tap water then put in container to take out. DD loves them and they make no mess (well no mess on her sometimes the floor is a different matter).

We love blueberries and grapes the best as take out fruit as they don't make mess and they keep DD occupied for ages.
She also loves sakatas, Bellamy's organic mini rice cakes with vegemite, plain stone ground corn chips, plain vege chips, homemade mini friands or pikelets, hard boiled egg, salad.
I always have a tin of baked beans and a spoon in my bag for emergency lunch. DD is wheat and dairy free so it's tricky to find healthy lunch options.

Our snack box has a variety of things

Cut up fruit (strawberries/watermelon), a banana or pear
Sultana bran buds are a hit
    Cruskits (plain)
    Fruit bars
Mini rice cakes (or big ones)
When DS was around one, we use to make little sandwich 'roll's, I stole the idea from another BB member - roll a peice of bread thinly with a rolling pin, spread it with anything - vegemite, cream cheese, avocado, mashed banana - any sandwich spread really, and then roll it up and let them chew on it, or cut it into bite size pieces - much less mess than them pulling apart sandwiches
We are also big fans of the squeeze pack yoghurts also
