Is it possible she is grunting and wriggling because she is uncomfortable? (eg wind or reflux?) and that might be why she stops once moved?

I've noticed my 4 week old does the same, stirs, wriggles, grunts and sometimes let's out a whingy cry, but after a couple minutes goes back to sleep. If he starts fully crying or screaming I offer boob
