Chicken with Rice and Leeks (first food)
Preparation time; 40mins. Makes 6-8 servings. Storage; suitable for freezing and keeps for up to 24hrs in the fridge. Ingredients
3 tbsp white basmati or long grain rice
300ml water
1/2 small chicken breast, skinned and cut into small pieces.
1 small leek, washed and thinly sliced
cooled boiled water for thinning Method
Put the rice in a sieve, wash and drain it. Place in a small saucepan and add the water. Bring to the boil and reduce heat. Cover with a tight-fitting lid and simmer for 5 minutes. Add the chicken and the leek and continue to simmer for another 20 minutes until the chicken is cooked right through and the rice and leeks are tender. Add a little more water if necessary. Puree the mixture until smooth. take out one portion to serve and add more cooled boiled water to thin if needed.
Chicken and Vegetable Stirfry (9-12 months)
Preparation; 30 mins. Makes 2-3 servings. Storage; keeps for up to 24 hours in the fridge. Ingredients
1 tbsp olive oil
1/2 chicken breast thinly sliced
1/2 tsb dried tarragon
1/2 red capsicum, seeded and thinly sliced
6 baby corn, sliced lengthways
3 tbsp frozen peas Method
Heat the oil in a frying pan. Add the chicken slices andtarragon and stirfry for a few minutes. Add the red capsicum and baby corn and continue to strifry overa gentle heat for 10-15 minutes until the chicken has cooked right through. Meanwhile bring a small saucepan of water to the boil and add the peas. reduce heat and simmer for 3-4 minutes until the peas a hot right through. Drain and add to the stirfry. Serve with rice and cut the chicken into small pieces.
Mixed Fruit Jelly (1-2 years, but can be given to younger children)
Preparation; 2.5 - 3.5 hrs. Makes; 4-6 servings. Storage; keeps for up to 2 days in the fridge. Ingredients
1 packet jelly
100ml boiling water
200ml cold water
175ml unsweetened fruit juice, such as orange, apple, grape or blackcurrant
175g finely chopped fresh fruit, such as peaches, strawberries, pears or bananas Method
Place the jelly in a large jug and pour in the boiling water. Stir to dissolve. Add the cold water and then the fruit juice. Take one large jelly mould or several small bowls and place the fruit in the bottom. Pour the jelly mixture over the fruit and stir to distribute the fruit in the jelly. Place in the fridge and leave until set.
