there was a women on Oprah a few weeks ago that has bought out a book with recipes for this exact reason. I am racking my brain trying to think of what it was called. Maybe have a look on the web under the Oprah Winfrey book club.
OK, its called deceptively delicious by Jessica Seinfeld. She even makes chocolate brownies with carrot and spinach in them
