Have you tried the different savoury tofus? DD is addicted to the sate one, cut up in fingers served cold. Great taste, preservative free and full of protein. There are 4 in a pack for $4. Pitted olives, cold sweet corn (raw or cooked), cold cooked potatoes from the night before, cold boiled eggs (also cooled in advance) are other favourites here. Also couscous salad cold with a few veggies, herbs or cheese in it is quick and easy.
Boiled eggs, cheese chunks, vegie sticks with hummus/tzatziki/avo dips or cooked vege peices with cheese sauce to dip, different types of breads, mini pizzas, corn and ham muffins, vege slice, pasta with tomato sauce (ie, home made passata/bolegnaise), fruit chunks with yogurt to dip, crackers (like rice/corn thins, ryvitas, cruskits, saos...) with peanut butter/cheese/cream cheese/ham, tuna salad (I make one with boiled baby taters or pasta spirals, corn niblets, grated carrots and green onions with a dollop of good quality mayo), cold sausages, home made soups.
Left overs are awesome. If you make a favoured meal the night before, make extra and put it in the fridge or freezer to reheat for lunch.
