don't worry about fore/hind milk. There's no set equation - she'll get what she needs.
One other thing you can try is offering a 3rd side (ie, back on the first again).

Once they get a bit older they can get extremely efficient at taking what they need from the breast very quickly and don't need to feed for as long. But the other thing I was thinking that maybe if she gets fussy after 5ish minutes, it could be that your flow is starting to slow down because you've had your initial let down and you're heading towards the end of the feed, so when your flow slows down she cracks it and gets all shirty with you as if to say 'this is crap! now I have to work at getting my tucker' and she has to work harder at sucking to get the milk.

Yes that thought crossed my mind too Trill. I have just fed her 5 mins each side, she fussed after the first side, went onto the second and fussed again after 5 mins. Kept trying to put her back on but she sucks a few times and cracks it. So pulled her away, she has like a little whinge for maybe 10 seconds, and then she is fine. She just did a huge burp. This is typical of each feeding session now. She must be full right!?

You can do this hun. Back to basics - yes, one feed at a time, and also paying careful attention to positioning and attachment each and every time. Also, if she is finished after a few minutes, maybe not trying to reattach her might help. You have got through so much already, you can get through this too

    It'll work
And like MR says, just let her go after 5 mins (or however long).
