    I haven't had much luck with the wilton "white" stuff that you add to buttercream. You have to add an awful lot of it and then it left a funny taste.

    My suggestion would be a whipped egg white type icing. I think it is called fluffly frosting in the women's weekly cake book (if you have that). Basically you boil sugar and water and then pour that (while hot) into whipped egg whites and keep beating for 10 minutes. It is great! I use it all the time as it is pure white and tastes like marshmallow. You might want to have a trial go first though...

    bloom thats interesting to know its actually sold to add to buttercream and other icing to increase whiteness I did consider the fluffy one but hav enever made it the party is at 9.30am so am guessing the way it sound swould have to be up bloody early to make it I dont know... i'll work it out.. have till the party on 2nd oct

    okay, I've been googling for you and came across this Flickr: Discussing How do I get WHITE buttercream??? in It's Your Cupcake, Cupcake!

    Not sure if that will help, but there are a few suggestions there, as well as an explaination about why its yellow!

    There is an icing called italian meringue buttercream that sounds quite similar to what Raupe was saying. Its really not that hard to do, I did it once (first time) to put on a white chocmud cake and it worked fantastically! I never even bothered with measuring the temp etc.. I just follwed the basic process and whipped the hell out of it, was very white!

    I think I have decided to go with the fluffy icing out of the womans weekly kids book sugar water whip egg white add syrup whip it up sound yummy sounds relativly easy and stuff all ingredients if I stuff up LOL will have a few packets of ready made icing on hand as well

    It is pretty quick, once you've had a practise batch. It doesn't take me any longer than buttercream.

    Italian meringue is nice, but I haven't had much success with it.

    Sounds great! Just make sure there are no pregnant ladies eating it, with the raw egg and all!
