I started off with flats and found them easy. Then was given fitted by the council and didn't like them, but decided to try some bamboo fitted ones, which I liked.
So I did a mix of bamboo and flats for the next size up, then got the odd AIO and stuffable and played around a bit. I do have "odd ones" that I like but tbh I'd be happy with just flats still if I hadn't been made to experiment a bit with the free nappies (which I don't use but are great for Nursery!).
You don't have to have fifty different types of nappy. I find that DH and I like different nappies so it pays to have different sorts for us, but if you're both happy with what you have then there's no need to do anything differently - unless you have a clothy friend so can see other nappies before you buy.
