Belfie - is it you who has the egg intolerance? I just saw this post on Fb by Quirky Cooking as possible egg substitutes:
1 Tblspn milled linseeds or chia seeds and 3 tbsp water = 1 egg; 1 banana mashed = 1 egg (in cakes); 3 Tblspns nut butter = 1 egg; 1/4 cup applesauce = 1 egg. Mum uses golden syrup instead of egg in baking too, which works well. For making the custard without egg, add a banana broken into quarters after 4mins of cooking time & add a bit more flour/cornflour.
I made GF bread from her site yesterday and it's so yummy. Really heavy though so I dont need much. There's enough dough for 4 small loaves and you can leave it in the fridge for up to a week and bake as you need. Though I'm doing to try and wean myself off carbs again.....says she who is about to use left over pancake mix for dinner :)
Who had a recipe for spreadable butter? i've promised DH I'll make some.
Lol tashy, I just posted for an egg WHITE sub, I have an awesome GF recipe tht I've changed it's gluten, dairy, soy, sugar free and NEARLY vegan! Once I find the substitue that works I'm going to start my blog! I have an allergy friendly banana bread recipe too!

tashy - thanks heaps for the egg substitute suggestions, it is my DS who's allergic, shall def try some of those. Re the butter I think it was Olive who made the butter from the EDC book.
organic-girl - egg white sub is a great idea. I don't think I've ever tried to make s'thing that should have egg-white!
Re the bolognaise sauce, my DH thinks it's too meaty and I can't seem to get the texture just right. So the other day I made 2 batches but browned the mince (shop-bought) in the pan. I think it was nicer that way. I also add capsicum & mushroom to mine (as no onion). Plus some crushed tomato. One of the FB pages the other day had some tips for doing the sauce and they said you can add more tomato & to definitely add the tomato puree. Anyway, next day I made lasagne. The bechamel sauce came up a treat in the TMX, using soy milk, corn flour & goats cheese. But then sadly the GF pasta wasn't cooked in the timeframe it said...so DH rushed out & grabbed takeway (had to feed the littlies) and we had it the next night after 40 mins more in the oven. It was AWESOME! Had hoped DH would cope with the goats cheese, but still didn't go so well. Bummer.
I think I've been going through a teensy disillushionment stage with my TMX. I've just had a run of recipes not quite working, or no-one wanting to eat them (apricot chicken - fail TWICE the rice is always crunchy!), and my DS just will not touch any rice dishes :(. So I'm attempting to find my mojo & get back to it again. I also need to start looking up new dip recipes as I still can't get my hommus quite right, and when I made the sundried tomato & capsicum DH just didn't touch it, and cos it has cashews I don't have it with the kids... so that didn't get eaten up. Plus I think sometimes my DH finds it easier to go for things in packets IYKIWM. Bit frustrating that. So do I have a very expensive juice & hot chocolate maker, lordy I hope not! I figure it's just part of the adjustment. In the new year I'm toying with starting my own blog (once I finish my project 365) to help me focus on being creative & recording what works for our restrictions. I think that's my other issue cos I have to substitute in almost every single recipe I make, so things don't always work out.
Anyway it's birthday party time this week - the cakes won't be made in the thermomix as I have got cake mix (sad, I know) that is egg, gluten, dairy, nut, fruit & rice free! Wonder what's in it hahahaha. Feels like a minor miracle (and yes, the rice issue is not ours - but one of the little guests).
with the hommus l like mine with some cumin in it...maybe try taht...or google general hommus recipes and convert them!

Surprised, I keep meaning to look at it more! And now I'll probably sound like I'm whinging, but sometimes folks with a super-healthy focus (lol) count us out cos they use a lot of fruit or nuts that we can't eat. So I just went and looked at 4 different recipes on her site, and every one had a significant ingredient I can't use - nuts (DS), dates (me), coconut (me)... etc. Now you see why I think I need to start my own blog, even if it's only me that reads it :lol:.
Olive - I tried adding cumin & roasted garlic to my hommus which was delish in flavour, but it was just too thick and my DS (who is still young enough to be quite unco) couldn't dip in it. I think I need to add some ice... but just a bit. Last time i added too much and it was runny but with chickpea chunks IYKWIM...it just didn't work. I've gotta remember that if at first you don't succeed... ;).
Do you add oil to your hummus??
Belfie - I go through stages as well. I get a bit sick of cleaning the TMX, tbh. Slack of me I know. It's not that hard :redface: It must be hard with all the dietary restrictions. I downloaded an app the other day which you can tick different restrictions and it comes up with recipes. You could then convert to TMX.
Does anyone else have little nicks all over your hands from cleaning the blades? I'm pedantic about it and I seem to nick myself all the time. I am so glad of the safety features. There have been times I am so tired, I could do myself some damage trying to add ingredients with the thing going, if it wouldnt beep at me when I'm trying to do something stupid.
I just made my first all-in-one meal tonight. I found a couple of recipes for fish and combined/adjusted. I steamed the fish in the Varoma tray, on top of some vegies, with rice cooked in the bowl in a mix of water, vegie stock & white wine. I then made a sauce with garlic, ginger, coriander seed, chilli, herbs from my garden (parsley & mint) - blitzed then sauted in oil (sunflower & sesame), added tamari sauce, a bit of water & some sugar and cooked again. Turned out nicely. The rice was lovely. The half of a tiny chilli I used was very strong. Friends gave us some they had grown and they're tiny so you think they're harmless. they are very hot :) Anyway, a small win for me. I told DH if it didn't work I was going to get fish & chips. A downside is I wont use the left over rice as it might be a bit fishy. I dont want to risk it.
We have our Varoma demo this weekend. i will be getting my cookbooks and it means I can order another Thermoserver.
I have some left over blueberry fruity dream I think I might wizz for dessert. That stuff is so yummy. With this hot weather, I'll have to make some more ice cream. This time I'll use normal sugar - rapadura sugar doesn't seem to work well.
i get cuts too tash! though i do like my thermomix brush for cleaning!!

Tashybabe - hehe my understanding is that the smaller the chilli, the hotter it will be! Do you know you can just put a tiny drop of detergent in with some water and put the tmx on to clean it? Of course depends on what you've made. I must admit I've never cut myself... we only rarely take it apart to clean, and it often goes in dishwasher.
Tonight I made a yum yum rice dish with leftover lamb kebabs. Cooked rice with a bit of cumin and curry powder, steamed some vegies on top. Then removed, sauteed up the already-cooked lamb, onion, garlic, ginger, and mushrooms with some stock. Then mixed it all together (out of tmx), added more stock powder (mmm salt!) and it was delish. Only slight downside was that the meat really fell apart to semi-mince even though I did it on reverse. I seem to have trouble with tmx and meat.
Now I just need dessert!
Surprised - yup I do use lemon juice but I think my lemons are really strong, as the first one was VERY lemony! (we have a big lemon tree). Re food... ok here goes:
DS - no eggs, no treenuts
DH - no dairy (not lactose, but all dairy)
Me - fructose malabsorption - which cuts out wheat, onion (& onion family), legumes (mostly), artichoke, asparagus, coconut cream & milk, honey, most fruits (I can just have a bit of berries, bananas & citrus - but nothing too concentrated), a few sweeteners that are very high in fructose and especially things like dried fruits (sultanas, currants, raisins, prunes, figs... nope).
So each one on it's own is quite doable, but when you combine them all it gets a bit tricky. We've always done a lot of tomato based dishes in the past, but the kids don't really like them. I've just finished losing some weight (14kg) and one of the things I realised is that I had used my food restrictions as an excuse to pig out & indulge myself - for many years. So part of getting my TMX is an attempt to overcome our restrictions in a creative & positive way. Sometimes we become too routine with a limited variety in what we eat. So I'm trying to challenge myself to make more variety. Certainly having the TMX means I'm more likely to cook a dairy dish for me & the kids one night, and a coconut & onion curry for DH another night... and then we get to have a greater range of enjoyable foods.
Surprised and Tashy - both of you, your dinner sounded awesome btw, yum yum, makes me want dinner again lol.
Tashy - what is the name of the app? I'm going to look at the official TMX app too. And I meant to say earlier that I get what you like about getting the cookbook instead. I think i look at my cookbooks too much and should surf the net a bit more. Incidentally I have the two thermoservers and I find it so useful! You'll love having another I reckon. I'm waiting on the GF book, apparently it's on backorder.... hope it doesn't take too much longer.
Wow that's crazy Belfie. I thought dairy, soy and gluten free was bad! Can you have dextrose (since it's only glucose)?
i just converted a Pioneer Woman vegetable risotto in to a thermomix one!! it worked!!
Have not read this whole thread yet, but I went to a demo today I was so much more impressed then I thought I would be. I was not a big fan of what the demonstrator made (to much garlic in just about everything for my liking). I actually put my name down to talk about becoming a consultant (bit nervous though) but I think I have my work cut out to convince DH that the money will be worth it.

I'm not sure I can justify the cost ATM - we eat quite healthily anyway and cook most things from scratch but there are aspects that definitely appeal.
D'you reckon you are spending more or less on groceries now you have your TM?
Fiona- we've spent more on groceries, but we're spending a lot less on dining out. We'd rather eat at home and know what we're eating. It's weird, as I'm not a great cook, but in the last few months we've realised that we get better value for money at home. We used to eat out a lot but have become disappointed as we compare it to what we can eat at home. Also, as I'm gluten free, the TMX means I can make my own flour or whatever.
It's great from a time saving POV. I first heard of TMX from a friend with 2 per-schoolers. She found it great to be able to set it to cook and walk away to deal with the kids without worrying about something burning on the stove.
Olive - how was the ice cream? I haven't made icecream in a while. I've made that much coleslaw in the last week though. Talk about easy & fast. I now do the carrot first, pour that out, then do cabbage & apple with the mayo. Then add the carrot back for a couple of seconds to mix it. I end up with more volume that way & am less likely to purée the coleslaw. I made the gluten free tabbouleh from then GF cookbook too, using home grown parsley which was yummy.
I get more satisfaction from food now I'm making things from scratch. Even simple things like serving homemade garlic & herb cultured butter with a BBQ. It tastes better.
How's everyone else going?
Btw, if anyone wants to make ghee, the recipe in the Indian cookbook is way wrong. You need to cook at Varoma for an hour on slow. It's great stuff but took so much longer than they said.
I got a thermomix off DH for Christmas. I'm not really a recipe follower so finding that hard lol I kinda overflowed it the other day cos I added to much extras to my risotto(minus the Parmesan) but caught it in time before the mess was too great.
And dairy free recipe's here, does anyone have any good ones I could try?

I made brandy cream anglaise to go with our xmas pudding (I got my Thermie a couple of days early :) ) and that was so yummy - pretty much substituted the vanilla essence for brandy plus an extra decent splash or two for good measure lol - only thing was it split a bit but once it had cooled slightly I put in the butterfly and whipped it for a few seconds and it came up lovely and smooth.......DH reckons it would make a good icecream lol

Cherished I make ice cream!! I use the recipe base recipe from Annabel Langbein, I've made her double choc nd raspberry ripple so far, i doesn't freeze it, I just pop it in a cake tin and into the freezer to freeze
I've made ice cream in the TMX - it's easy peasy. Havent made it in a while, though.
You need to host or attend a demo to buy a TMX - it's the best way to see it in action & ask loads of questions. I recommend having it at home with your other half so they also see the benefits, rather than freaking out about the price, like mine did :) He was convinced when we had a home demo.
Thanks girls! The price is worthy of freaking out :o will see how I go. I know I want an ice-cream maker and slow cooker though so maybe the thermomix is the answer ;)
Oooo and the thermie does so much more! Yes the price is a kick in the guys but seriously when you have one you realise it is worth it!

I had a look online and read reviews etc but never saw one in action.
I made the iced coffee this arvo...........wow think my moccona coffee is a little strong for amount it says in the EDC so might cut it back a bit next time and add a bit more milk, it came out like coffee softserve but was YUM, have frozen the left overs and will just defrost slightly and add some more milk before I re-whiz it :)

Cherished - I still use my slow cooker for things. Mostly for making chicken stock or stews. When cooking Indian, I'll make the sauce in the TMX, then slow cook the meat in a slow cooker or a dutch oven. The dutch oven gives a better flavour but the slow cooker means I can walk away. We could cook the meat in the TMX, but I think slow cooked makes it more tender. I make a kick arse chicken soup in the TMX though :)
Btw, when I say I make the sauce in the TMx, I mean I buy things like cardamon pods, cumin seeds etc, roast & grind them in the TMX, mix in the other ingredients & cook the sauce in the TMX. Not something I would have bothered doing pre-TMX because I couldnt be bothered with a mortar & pestle etc.
The thermochef is cheaper for a couple of reasons: it's a copy of the older model of TMX, it's made in China, it has a mechanical motor & no reverse function. The TMX is German design & made in France, it has a resistance motor which will last years longer than a mechanical motor & has the reverse function. The reverse is actually important, IMO. It's such a powerful machine, it's easy to puree things. When leaving something to cook, I usually have it on reverse & walk away knowing I wont come back to slush.
The thermochef is good if you dont have the $2k for the TMX, though TMX do have finance options. My Mum bought hers on finance after swearing she wasnt going to get one. She now uses hers more than I do, but then she's a more experienced cook than I am. Anyway, I relate to it like this: I want a Miele washing machine. We cant afford a Miele. If we could, we'd know it would last us 20+ years & our clothes would last longer too. Instead, we're likely to buy a Samsung, which is much cheaper but we'll probably have to replace again in 10 years. We have a Whirlpool which we have to replace after 5 years. I see it as a similar issue between Thermomix & Thermochef. You can spend $800 on the Thermochef, but it wont last as long. But that may be what you can afford now. Have a demo before making that decision. I took ages researching before we bought one.
If you get the TMX, you wont need an ice cream maker as well.
Good advice l&b. Also, thermomix runs interest free promotions a couple of times a year. The last one just finished in December but it was interest free for 12 months hopefully they run it again in the next few months. It worked out at just under $40 a week for 12 months and you own it. My aunty (family of 6 plus a baby) said she saved more than that per week in groceries when they got their thermie. Lots of people wait for interest free to come around to buy.

Just wanted to weigh in here as I'm having a demo on Saturday and I intend to purchase one. I'm a bit worried if we will use it enough to justify the cost - but I am a keen cook without enough time on my hands. I always cook from scratch. For the last fortnight I've been cooking dinner and thinking "up, I could use the TM for this sauce" or "I could steam these veg in the Varoma".
I have just started a healthy eating plan (2 shakes per day, high protein snacks and a high protein and vegetable dinner) so I think I will be steaming lots and making lots of vege soups (when the weather cools down).
That's great Bloom. You could also make your own protein shakes & snacks in the TMX. That way you know exactly what goes into them. A lot of them have more sugar than I think they should have, but so much processed food does.
