Ok I give up - how do you get your towels so soft?

i dry mine inside on the clothes airer until they are just dry and then i shake them and fold them...

if i leave them for to long they go crunchy...

Don't dry them too quickly. Hang them over the line in half, don't just peg them by the end. That way they take longer to dry, really good on windy days which tend to make towels really stiff.

Vinegar in the rinse as well.

In the dryer - they come out really fluffy

unless i put my towels through the dryer they are crunch/hard/stiff, it doesn't matter where i hang them (inside or outside) and it doesn't matter how i hang them in half or full. btw i have a front loader.

use a slower spin cycle
'snap' them (give a really hard shake) both before you hang them and when you get them off
give them a hot wash in some (like half a teaspoon) of dishwashing liquid and rinse until clear - to get rid of washing powder and softener buildup
I hang them like Astrid said. Usually in the shade too, though where I live towels only take half an hour to dry lol.

I don't have a dryer and they are never crunchy unless they are my el-cheapo ones so I think it depends on the quality of them too. I have Canningvale and Egyptian Cotton towels, washed with fabric softener and line or clothes horse dried and we wash in cold without a problem!
