Sure!
Now there's two types. Ones that rise with SR flour. And ones that use yeast. I prefer the yeast ones, but I'll give both recipes for convenience.
Yeast Free Scrolls (adapted from taste)
300g (2 cups) self-raising flour
Pinch of salt
90g butter, cut into cubes
160ml (2/3 cup) milk
Plain flour, to dust
Step 1
Preheat oven to 210C. Line a baking tray with non-stick baking paper. Sift the flour and salt into a large bowl. Use your fingertips to rub the butter into the flour until it resembles fine breadcrumbs. Add the milk. Use a round-bladed knife in a cutting motion to mix until evenly incorporated and the mixture begins to hold together.
Step 2
Turn the dough onto a lightly floured surface and gently knead until smooth. Use a lightly floured rolling pin to roll out the dough into a 30 x 40cm rectangle.
Step 3
Spread tomato paste/mayonnaise/vegemite & butter (whatever you plan to do really) evenly over the dough, leaving a 2cm border around the edge. Sprinkle with the cheddar, ham and any other toppings. Starting from a long side, roll up firmly to form a log. Brush the edge with a little extra milk and press down firmly to seal the log. Cut crossways into 12 equal portions, about 3cm thick. Place scrolls on the prepared tray. Bake in preheated oven for 25-30 minutes or until golden brown. Remove from oven and set aside to cool.
Now the recipe I use for my scrolls is a Thermomix one. You could easily use a mixer, like a KitchenAid and a dough hook but if you don't have these I would google a no-knead bread recipe. Pioneer woman has a few which you could alter the sugar levels of. And her cinnamon scroll recipe is the best which could be easily made into savoury scrolls.
If you want the TMX Recipe I'll PM you as they are funny about their recipes being reproduced. But if you google Tenina Cheesy Scrolls Theremomix it will come up. Keep in mind with any of these recipes you need to experiment with sizes, rising times and dishes used for each recipe. As everyone is different has different tools and the climate is different everywhere.
Oh for a child who ate half of what has been listed here. DS is starting Kindy tomorrow, three full days, and I have no idea what to give him. He eats NO fruit, NO vegetables. Doesn't like 'combined' foods - a slice or sushi would be out of the question. Used to eat muffins with grated vegies in, but i went too far one day and added zucchini and now he won't touch them. Honestly, I think it's going to be vegemite sandwiches x 3. If his school did a lunchbox inspection I would be irate, some kids are very fussy and very determined and who is a teacher to judge a parent on what they give their child? If he would eat healthy food I would spend hours preparing it, but he simply won't. It's embarrassing, but not much I can do about it.
Some kids will eat stuff at school and kinder, that they won't eat in front of their parents. They see what other kids eat and sometimes will come home asking for that food.
I've just made and frozen a heap of rolls for DD2's lunches. She helped me make them, so I know they'll get eaten.
I am contemplating freezing their yoghurt so it doesn't mysteriously disappear (or get eaten) after school while I'm at work. Does anyone else do that, how does it go?
Frozen yoghurt is the best I remember doing that when I was in school. :D
I'm bummed. I just made corn fritters and they don't like the corn kernels! They'd eat em if only had cheese and ham but that's kinda going against the whole point ( making healthy lunches). At least its not processed i guess.
If you blitz the corn in the food processor with the batter they won't even know they are there. You can hide anything with a food processor :)
Hmmm..... I think I need to get myself a food processor!
Honeybee, you'd be surprised what kids eat when peer pressure is at hand! I would be putting one thing in the lunches which you don't expect that he will eat and see what happens. If he doesn't eat it so be it, but he might have a go! Especially if he's hungry.
I have baked up a storm the last few days, making some raspberry-coconut loaf, and cutting it to freeze.
Some cheese and veg muffins and some small chocolate cupcakes.
It's funny for me, at my kids pre school, they have a healthy lunches policy, but I often put in home made goodies like choc chip pancakes, small choc muffins/cupcakes or various biscuits, and the kids have been allowed to eat them, but I have had friends tell me they give them those sorts of things brought from the shop ( so packaged stuff) and their kids haven't been allowed to eat them and they get sent home with a note! I think they feel it's healthier for them to have home made (which it usually is!).
Can you make fritters with wholemeal flour? Will it taste really different?
Also, its ok to eat tuna cakes cold hey?
Yes you can and yes you can :)
Yes, yes little and yes, 2CM... :)
Haha :-) guess that's a yes!
My DD has been to school for 2 days.. And had the same each day.
morning tea was cheese, plain rice crackers, sultanas and 2 slices of apple.
Lunch was cheese sandwich, rest of apple, and a squeezy yoghurt and some carrot sticks.
I just went shopping for the start of this week and she asked for grapes and cucumber and carrots instead of apple.. But otherwise it is pretty much the same.
So excited! DDs new lunchbox arrived in the post on Friday, picked it up from the PO yesterday! :D She was concerned it looked so small, but I think she will be happy when she sees how much I can actually get into it.
Ooo what sort is it?
A two tier bento... It is pink, with love hearts on it... So she is pleased! LOL
