It depends what everyone esle is having, but most days he has a vegimite sandwhich or I make him a salad in his bowl with some cold meat , cheese , cucumber, tomato, lettuce, celery & carrot & whatever else happens to be available.

Most times it's dinner leftovers from the night before. I always make extra for lunch the next day. Otherwise, if it happens to all get eaten beforehand (by DP ), it's usually a sandwich with avocado, hommus or tzaziki.
Tuna, grated carrot, corn and mayo sandwiches. DD (nearly 3) will aslo eat this mixed with baby potatoes, so it's kinda like a potato salad.
Quick omlette with chopped ham/bacon, cheese, frozen corn/peas, grated carrot/zucchini/mushroom (whatever veggies I have in the house)
Leftovers, he particularly loves leftover bolegnaise and lasagne

When I'm feeling energetic and have lots of extra time, I crumb some fresh fish or chicken into 'nuggets'- just bite sized peices- and make homemade chips with potatoes, pumpkin, sweet potato, and carrots. Served with a salad assortment of cucumber sticks, cherry tomatoes and avocado bits.
One for when I have only a little extra time, is- Put a peice of bread into a muffin tin, and fill with a mixture of eggs, cheese, creamed corn and bacon bits. This is really yummy!! I have an actual recipe if you want it...
I try to vary it each day. Yesterday she had an omlette with tomato, ham and cheese. Today she had some chicken strips and a home made banana muffin. Tomorrow, who knows!!!! Less seems to be going on the floor these days!
Whatever everyone else is eating. Sometimes a sandwich with vegemite or peanut butter or cheese. Sometimes a cooked meal if we have it at lunch instead of dinner, etc. But we always include a banana because he demands it everyday.
