I'm looking for some things I can cook and freeze for the babymoon days that use potatoes (as we have a stack of them!). I usually bake or chip potatoes as I don't like mash so I'm a little clueless!
I thought of shepherd's pie but I'm not a huge fan. Any other ideas?
We're vegetarian so vegie recipes or ideas that can be converted to vegie would be appreciated
I had a feeling they don't freeze well. I was considering a potato bake... wonder how it would go? I generally don't like potato in curries but pea & potato sounds good.
I still find it goes gross in soups. I'm pretty sur potato bake freezes really well though.
I do pea and potato curry with a tomato-ey sauce. I will make it probably next week and blog the recipe, if you can wait that long?
In the Bolivian high plains, freeze dried potato is a specialty. By freeze dried, they pretty much mean left out in the cold to rot, then stomped to squish out the juices. The product is called chunio, and they make an amazing chunio flour bread, which is kind of halfway between bread and biscuit. They also make an amazing soup called chairo. Delicious.
