Audax, What did you end up doing with your kidney beans? I would have suggested a chilli bean dish too. We just cook the beans with tomatoes, cumin, chilli, garlic, onion, mushromms, corn kernels. Serve with white or brown rice and mashed avocado. If you want to be naughty, you can have corn chips with it too.
Maggoty potatoes sound really disgusting! It might be a gourmet dish in some parts of the world. It has been very hot though. The flies knew they weren't going to find decaying meat in your house, so had to settle for potatoes!
I found a yummy dip at Woolies yesterday. Pumpkin and cashew (no dairy). I stirred it through spiral pasta for a quick accompaniment to our raw vegie platter dinner last night. It was yummo. We also had steamed broccoli and cauliflower with sesame seeds. Vey simple but delicious.

Sesame seeds make anything delicious. Mmmmm. I have some of that pumpkin dip in my fridge, some friends brought us some after the floods when we'd lost all the food in our fridge.
My kidney beans ended up as nacho beans with brown rice, and the very naughty corn chips! So delicious.
Tonight is butternut pumpkin and sweetcorn risotto with wholegrain mustard.
Lunch today is rice paper rolls, but I didn't make them myself... *guilt* ...had an appt at the hospy, so bought them on the way home.

Now I know why I procrastinate about posting in this thread... makes me incredibly hungry :lol: although the idea of maggoty potatoes has kinda made my stomach turn...
I have been soo lazy on the food front here - just eating boring old salads or wraps, its been too hot to cook properly, we're still on our run of 40ish degree days, so horrible. Can't wait for the cooler months, summer just about kills me.
Dinner tonight: :think: Probably nachos now that I am massively craving them

Maggoty potatoes reminds me of "The Diary of Anne Frank"... good thing you don't need to eat them for the protein!
Sesame seeds do seem to make everything yum! I've been putting less cheese on the top of our lasagnas and put sesame seeds on instead and they are yummo and crunchy :D
Not sure what's for dinner tonight- last night in the house! Probably pasta and the last of the veggies.

Now to the foooood. I am having one of the MG mums and her husband over on Thursday for Lunch and was wondering what you all thought we could serve. It'll be hot most likely and we are really strapped for cash so something quick and cheap will be great. I was thinking something really basic like baking a loaf of bread and having a salad but even salads with yum stuff in them are expensive... yep I'm sounding like a real cheap skate :redface: The problem with that is I never know when my bread is going to flop :o lately some are fine and others not and I have no idea why :confused: I think I'm making them exactly the same but I mustn't be?
Then on Friday night we are having another mum and her hubby over for dinner. We have already decided to make curries and I make a yum chutney to go with it so that is sorted but any ideas on Indian entree or dessert. Mango lassie comes to mind but too expensive. What else could I do? Maybe a coconut mousse (sp?) hmmmm I guess one mango in a coconut mousse wouldn't be too expensive.

do you have a fruit and veg shop near you? They often have specials on items that are only going to last another day or so, or things that are in season.
Bruschetta would use tomatoes in season which should be cheap at the moment- I saw roma tomatoes in our local shop a kilo for $2, dice finely with some diced red onion, olive oil and basil and garlic to top your yummy home baked bread? Would also be good if the bread doesn't go exactly to plan....just toast and hide with tomatoes!
My favourite 'after curry' dessert is very cheap and takes almost no preparation at all.... but isn't very fancy as a trade off. Find some sweet Valencia oranges. Cut and serve. So refreshing after a heavy curry!

Love the dessert idea! and the bruschetta idea which really is perfect if the bred flops :clap: funny I am about to start restricting the foods which cause my skin to break out in eczema and tomatoes are the worst for me followed by oranges and pineapple lol So maybe I should have those things as one last hoorah! lol I've even got the list of foods to avoid sitting on my desk as I type. DH loves bruschetta and I never make it so that would be nice with some feta and black olives on the side :)

:) I'm the same with tomatoes and citrus.....but my eczema isn't bad enough to ditch either in summer! hehehe.... covered in sorbelene sucking on an orange :)

Awww man my hands are SO bad at the moment, I was just thinking that I'm going to have to put some of the nasty cortisone cream on tonight followed by a huge smothering of moogoo then pop my wet cotton gloves on so let it all really soak in. So maybe I should give them a miss :think:
Anyway I've rethought the orange thing and would like to try making a dessert I've never made before and woo them KWIM. He's a chef so I'm feeling a little pressure to serve them yummy food (not that oranges aren't yummy)

My hands are revolting at the moment too - the humidity is hideous.
I have no idea what's for dinner tonight. DD is getting her needles today; can't think about anything beyond that trauma. i have: fresh stock, sweet potato, beans, eggplant, baby spinach, red capsicum...
****ing garbage truck just woke my baby. Grrrrrr!

awwww, how old is bubba Audax? I hope it's not too traumatic for both of you today!
I'd be making a lasagne with those ingredients, or vege stack anyway, using the sweet potato and eggplant as layers instead of pasta :)
We've got plain old mexican mix again tonight... orrrrr..... might be having peach jam on fresh bread- the jam is on the stove right now and it's delish!!!!!!

Hi Cherished! What about pistachio icecream for dessert? I don't have a recipe on hand but I have seen it on menus in Indian restaurants. I am not sure of the other ingredients ( I'm a lot of help aren't I !?). And I would always serve curries with pappadums, and sliced banana with dessicated coconut.

We ended up having a veg curry tonight. DH made it using some spice sachets that mum's neighbour gave us. They're quite good, and SO handy to have around!
Needles were horrible. I'm not actually sure which one of us cried more. She's asleep on my shoulder right now, and I think we might be in for a loooong night.

I'm making a dahl tonight with yellow split peas... I've never made one in the slow cooker before, I usually mix a dahl with pumpkin and spinach and i'ts easy as pie, but needs a bit of stirring at the end, which I don't actually have time for today... would i just chuck everything into the slow cooker and leave it go? Feel a bit silly asking actually, but hoping somebody knows!!! xx

Hi Krystals! I'm not a slow cooker expert- only used mine a dozen times. I have always thrown everything in together at the one time. That method has always served me well! Hopefully an expert drops by...

krystals - you might need a bit more water if you're slow cookering. I have never done dal in the slow cooker though, so no real idea.
We're having ratatouille tonight. If I ever manage to put this baby down! last night wasn't too bad - temp up a bit, but no less settled than the night before. Might have it with polenta cooked in my fresh stock. Yums.
