Tonight we had leftovers from last night and DP made The Spawn fried rice which was sooo delicious we both scabbed out of her bowl lol. She wont do hot curries so we make her a side meal if we have something she wont eat.
So the wholemeal flatbreads were AMAZING!! Omg Im making them everytime we have curry now they were soooo good. I had the pan a bit high at one point and had to put the fan on as I smoked out the kitchen but all worked out in the end. The rest of NYE was quiet, watched a b-grade movie and was in bed by ten, yawn. Today we drove to the beach and of course it was windy as hell and pouring down by the time we got there so we went to the nearby shop that has a cheap sushi train and had a feast. I love the weekend when we can have meals together as a family(DP works nights so we only get lunch together during the week)

Hi Peach! I'm glad the flatbreads were a success! Did you set off your smoke alarm?!
The Japanese was divine. There was one problem - the kids loved it too and got stuck in to the dishes that DH and I wanted to save for ourselves!
We went to a kids birthday party this arvo, and the host had made about a hundred teeny weeny vegan cupcakes and had bought a vegan cake. Damn you 30 days no junk! I don't know how I resisted! I just scoffed on watermelons and cherries instead. DH made carrot, apple and celery juice this morn, and we had salad rolls and soup for lunch so I am feeling really healthy today! There is choc in my fridge and I have resisted, yay!

Have a tiny vegan asleep in my lap, so not much to say.
Dinner last night was out at favourite Chinese restaurant, lunch today was at Loving Hut. Brekkie in between was avocado on toast :D
AND I managed to blog the adzuki bean burgers.

Argh, the choc is still in the fridge. My DH isn't a choc fiend. I will have to give it to my mum.

Send it up here! My resolve hardens by the day. Every day that Tiny Vegan has a shocker (I'm increasingly thinking it's not chocolate) I get more and more stubborn in my quest. I can babysit your chocolate for you.
Dinner lastnight was pasta with capsicum, mushroom and black eye beans.
Tonight, probably pizza??

Ash you are an inspiration Woman! I lasted 4 days junk free :( And yes I did manage to smoke out the house with my flat breads lol, is there a secret tip to prevent it happening? We took the battery out of the smoke alarm and blasted the fan :)
Are any of you ladies into Harry Potter? DP and I managed to get out to the movies last nightfor the first time since we were pregnant(!) and saw 'The deathly hallows' it was amaaaaaazing!

I LOVE Harry Potter. Saw it the day it came out seeing my baby wasn't born... wasn't game to wait another day in case he arrived before I could see it at the cinema :lol:
We had an unsettled night last night and it was because today was poo day (he only does then every 4-5 days). I don't find foods play a bit part in unsettled-ness.
Dinner tonight was lentil & tofu burgers with vegies stirfried in salsa and homemade ovenbaked wedges. Was delish!

Dinner at your house sounds delish Meow. What burger patties do you use, or do you make them? Ok how wicked good was that movie seriously?! When it ended I could not believe it had been two and a half hours! Poor DP though, he only read the first few books so he had no idea who anyone was(neither of us have seen the movies apart from chamber of secrets). He still enjoyed it though. Cant wait for the next installment.

Tomorrow is 9 days without poo here. I thought today would be the day, but just a boatload of toxic farts. But let's not talk about that in a food thread!
Dinner tonight was rice noodles with stirfried tofu, eggplant, celery, mushrooms and capsicum.
Lunch was an awesome salad with cos lettuce, capsicum, cucumber, tomato, snow peas, olives, avocado, toasted pita bread bits, aussie bush spice dukkah, white balsamic, olive oil and some LSA.

I apologise for not keeping up with this thread :redface: I'm hopeless. I've just started back at work this week, so I'm a bit everywhere at the moment! (really i'm just an absent-minded procrastinator, but I'm sticking with my 'back at work' excuse pmsl)
I'll just do a quick post of what I had for tea last night: yummo veggie thai style curry with rice made in my fancy schmancy rice cooker - I never really saw the need for one, I got given one and it's really good!!
Will try and post properly tonight at home when im not on my phone.

Our meal plan for the next week:
Tacos - salad vegies, white beans, chilli sauce, avocado;
Tempeh curry with pappadams and brown rice;
Pasta sauce made with lentils and vegies, with wholemeal penne and garlic bread;
Pumpkin soup with a side plate of steamed vegies, toast for dipping
Felafels, hommus, Lebanese bread and salad;
Cous cous with baked vegies, tofu and diced salad vegies;
Tikka Masala vegetable and chickpea curry with basmati rice;
Mini pizzas ( the kids make their own) - toppings incl. Mushies, tomatoes, red capsicum, olives, baked pumpkin, avocado, red onion, tofu, parsley.

Holy Guacamole this thread makes me HUNGRY.
I want to do meal plans but it's just me here so I tend to end up living on left-overs. I'm still eating that thai curry... I missed the "you're a single woman" memo and made more than enought to feed a family for two days... hooray for freezers is all I can say.
Oh and after my rant about spinach and ricotta canelloni being the only thing on offer at resturaunts - I caved and made some myself - and by golly it was GOOD. So much better than the junk you get given when your out.
*Ash* - How do you make Felafels? I see the packet mix box things but I am kinda to scared just in case they aren't nice.
Audax - hope you & the fam are ok in the floods.
Going out for Yum Cha tomorrow with friends... here's hoping theres lots of vego meals I can eat :lol: wish me luck.
ETA: I bet you can all guess what I'm having for dinner tonight - yes, curry :rofl:

i have to share this recipe we had these for dinner and for the first time DH didn't grumble about no meat!!
Sweet corn and bean enchiladas
Ingredients (serves 4)
12 enchilada tortillas
1 tablespoon olive oil
1 small red onion, chopped
1 red capsicum, diced
1 zucchini, grated
1 teaspoon chilli powder
1 large tomato, diced
310g can corn kernels, drained
400g can red kidney beans, rinsed, drained
200g jar taco sauce
3/4 cup grated tasty cheese
Method
Preheat oven to 180°C. Wrap tortillas in foil. Warm in oven for 10 minutes.
Meanwhile, heat oil in a frying pan over medium heat. Add onion, capsicum and zucchini. Cook for 3 minutes. Add chilli powder and cook, stirring, for a further 2 minutes. Add tomato and cook, stirring, for 2 to 3 minutes or until soft. Add corn, beans and salt and pepper. Remove from heat and stir to combine.
Grease a large baking dish. Place 1/4 cup filling on 1 warm tortilla (keep remainder wrapped in foil as you work). Roll up. Place, seam side down, in baking dish. Repeat with remaining tortillas and filling.
Spoon taco sauce over tortillas. Sprinkle with cheese. Bake for 10 to 15 minutes or until cheese melts. Serve immediately.

Bean patties with aioli
Ingredients (serves 4)
400g can cannellini beans, drained, rinsed
1 garlic clove, crushed
2 spring onions, finely chopped
4 tbs grated parmesan cheese
1 tbs chopped fresh basil
2 tsp grated lemon zest
1 tbs lemon juice
1 tsp mild paprika
2 tbs plain flour
1 large egg, beaten
2 cups packet breadcrumbs
250ml (1 cup) oil, to fry
Lemon wedges and salad leaves, to serve
Aioli
3 garlic cloves, peeled
1 egg yolk
1 tsp sea salt
2 tsp lemon juice
175ml extra virgin olive oil
Method
To make the aioli, crush garlic into a bowl and add egg yolk, salt and lemon juice. Whisk lightly to combine. Add oil drop by drop at first, then in a slow steady stream, whisking until you have a smooth emulsion. This will keep, covered, in the fridge for 3-4 days.
Process the beans, garlic, onion, parmesan, basil, lemon zest and juice and paprika in a food processor until smooth, then mould into 4 patties. Refrigerate for 15 minutes to firm.
Place the flour in a bowl and season with salt and pepper. Place the egg and breadcrumbs in separate bowls. Roll patties in flour, then dip in the egg and roll in the breadcrumbs. Refrigerate for 15 minutes.
Place oil in a frying pan over medium-high heat. When hot, add patties and fry for 2 minutes each side. Drain on paper towel. Serve with aioli, lemon and salad.
might do wedges instead of salad though, oohhh veggie curries does anyone have some recipes?

What to do wth kidney beans? Soaked some, thinking we'd have bean and potato casserole, only to realise we are out of paprika and my potatoes wer not only rotten, but maggoty! Ewwww!
Have capsicum and celery so might just do a bean ragu and have it with polenta.
How are you guys finding food prices? Supermarket prices here are through the roof, but at our farmers market they've barely been affected! Although the range of produce is down. Could have cried for one guy - his entire crop of strawberries and mushrooms is gone.
